Time 3m

Number Of Ingredients 10

1/4 cup soy sauce
2 tbsp toasted sesame oil
1/4 cup white vinegar ((adjust to taste for sharpness))
1/4 cup olive oil ((Note 1))
1 tbsp sugar ((any type) or 1 1/2 tbsp honey)
1 tbsp soy sauce
2 tsp toasted sesame oil
1 tbsp white vinegar
1 tbsp olive oil ((Note 1))
1 tsp sugar ((any type) or 1 1/2 tsp honey)

Steps:

  • Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
  • Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
  • Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
  • Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.

Tips:

  • Choose fresh, crisp vegetables: Steaming helps preserve the nutrients and vibrant colors of vegetables, so start with the best quality produce you can find.
  • Cut vegetables uniformly: This ensures even cooking. Cut root vegetables like carrots and parsnips into thin matchsticks, broccoli and cauliflower into florets, and leafy greens into bite-sized pieces.
  • Use a steamer basket or colander: Place your vegetables in a steamer basket or colander suspended over a pot of boiling water. The steam should gently cook the vegetables without overcooking them.
  • Steam vegetables until tender-crisp: Overcooked vegetables lose their nutrients and flavor, so aim for a tender-crisp texture. This usually takes 3-5 minutes for leafy greens, 5-7 minutes for tender vegetables like asparagus and green beans, and 10-12 minutes for root vegetables like carrots and potatoes.
  • Make the honey sesame dressing ahead of time: This allows the flavors to meld and develop. You can store the dressing in an airtight container in the refrigerator for up to a week.
  • Toss the vegetables with the dressing while they're still warm: This helps the dressing evenly coat the vegetables and infuse them with flavor.

Conclusion:

Steamed vegetables with honey sesame dressing is a delicious and healthy side dish that can be enjoyed as part of a well-balanced meal. The steaming method preserves the nutrients and vibrant colors of the vegetables, while the honey sesame dressing adds a touch of sweetness and umami. This dish is also versatile and can be easily customized to your liking. Try adding different vegetables, such as sugar snap peas, bell peppers, or mushrooms. You can also adjust the amount of honey and sesame oil in the dressing to suit your taste preferences. With its simple preparation and delicious flavor, steamed vegetables with honey sesame dressing is a great addition to any weeknight dinner or lunch menu.
