Time 30m

Yield 4 serving

Number Of Ingredients 2

1/2 pound young green soybeans (about 4 cups of pods), fresh or frozen
2 tablespoons salt

Steps:

  • Separate the pods from the stalks. Place bean pods in a large bowl. Sprinkle generously with salt, rub vigorously, and let stand 15 minutes. Bring a large pot of well-salted water to a boil, add the beans and boil over high heat for 5 to 6 minutes. (For a firmer bean, decrease the cooking time.) Don't cover the pot or the beans will lose their bright green color. When ready, drain beans and serve hot or at room temperature. To eat as finger food, serve the beans in baskets or bowls. Squeeze the pods with your fingers to press the beans into your mouth and discard the pods.

Yield Makes a pound of sprouts, enough for several meals

Number Of Ingredients 8

1 pound soybean sprouts
Water
2 green onions, thinly chopped
3 garlic cloves, minced
1 tablespoon toasted sesame seeds, crushed
1 tablespoon sesame oil
1 1/2 to 2 teaspoons salt
1 to 2 teaspoons chili powder

Steps:

  • 1. Wash the bean sprouts in cold water, removing any bean husks. Place them in a pot and add about 1 cup water. Do not fill the pot. Bring to a boil and cook for about 5 minutes. (Do not lift the lid to check if the pot is boiling because an unpleasant, fishy odor will fill your kitchen.) Remove from heat, rinse in cold water, and drain.
  • 2. Add green onions, garlic, toasted sesame seeds, sesame oil, salt, and chili powder and combine thoroughly, adjusting the salt and chili powder to your taste. Serve warm or chilled.

You can find soybeans in the frozen section of most Asian markets.

Categories     Food & Cooking     Appetizers

Number Of Ingredients 3

1 pound fresh soybeans or 12 ounces frozen
Kosher or sea salt
8 rice crackers

Steps:

  • In a pot of boiling water, add the soybeans and cook until bright green, about 5 minutes. Drain and refresh in cold water. Sprinkle with salt and serve with the rice crackers.

Tips:

  • Choose fresh, high-quality soybeans. Look for soybeans that are plump and have a bright green color. Avoid soybeans that are wrinkled or have any signs of damage.
  • Soak the soybeans overnight. This will help to soften the beans and make them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2 minutes, then removing them from the heat and letting them sit for 1 hour.
  • Use a steamer basket to steam the soybeans. This will help to ensure that the beans are evenly cooked. If you don't have a steamer basket, you can use a colander set over a pot of boiling water.
  • Steam the soybeans for 15-20 minutes, or until they are tender. The beans should be slightly firm, but not hard.
  • Season the soybeans with coarse salt. The salt will help to bring out the flavor of the beans. You can also add other seasonings, such as garlic powder, onion powder, or black pepper.
  • Serve the soybeans hot or cold. Steamed soybeans can be served as a snack, side dish, or main course.

Conclusion:

Steamed soybeans are a delicious and healthy snack or side dish. They are a good source of protein, fiber, and vitamins and minerals. Steamed soybeans can be enjoyed on their own or seasoned with a variety of spices and herbs. They are also a versatile ingredient that can be added to salads, soups, and stews.
