Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Nuts & Seeds     Almonds

Number Of Ingredients 5

1 head broccoli, broken into florets, stems chopped into 1-inch pieces
1 to 2 teaspoons extra-virgin olive oil
2 tablespoons slivered almonds, toasted
Zest of 1/2 lemon
Pinch crushed red pepper flakes

Steps:

  • Place a steamer basket in a saucepan filled with 1 inch water. Bring to a boil. Add broccoli. Cover, and cook until crisp-tender, 4 to 6 minutes. Transfer to a serving bowl.
  • Drizzle with olive oil and add almonds, lemon zest, and red pepper flakes; toss to combine. Serve immediately.

Tips:

  • Choose fresh, vibrant broccoli: Look for broccoli crowns that are deep green in color, with tightly closed florets. Avoid broccoli with yellow or wilted florets, as this indicates age or improper storage.
  • Cut the broccoli into uniform florets: This will ensure even cooking. Cut the broccoli into 1-2 inch florets, or smaller if desired.
  • Steam the broccoli until tender-crisp: Overcooking can make the broccoli mushy, so aim for a tender-crisp texture. Steaming is a gentle cooking method that preserves the broccoli's nutrients and vibrant color.
  • Use a steamer basket or colander: Place the broccoli florets in a steamer basket or colander set over a pot of boiling water. Cover the pot and steam the broccoli for 3-5 minutes, or until tender-crisp.
  • Season the broccoli with lemon and herbs: Once the broccoli is cooked, toss it with a mixture of lemon juice, olive oil, salt, and pepper. You can also add other herbs and spices, such as garlic, chili flakes, or paprika, to taste.

Steamed lemon broccoli is a simple yet flavorful and nutritious side dish that can be enjoyed as part of a healthy meal.
