I used to love this Chinese-restaurant appetizer so much that my mother reverse-engineered the recipe. These dumplings have an interesting taste and are great for parties. They also freeze well. Hope you enjoy them--it's worth the work involved.

Number Of Ingredients 14

2 cups flour
1 egg
1/2 teaspoon salt
water (enough for a thick, bread-like dough)
1/2 lb ground pork
2 scallions, finely chopped
1 (1 inch) piece fresh ginger, finely-chopped
1/4 cup peas (thawed if frozen)
1 teaspoon chili pepper flakes (optional)
2 tablespoons soy sauce
1/2 tablespoon rice vinegar (rice vinegar)
1 tablespoon honey
1 teaspoon sesame oil (optional)
1/2 teaspoon sesame seeds (optional)

Steps:

  • Mix ingredients for dipping sauce and set aside.
  • Lightly oil a large bowl.
  • Put the flour and salt in another large bowl, piled up.
  • Make a dent in the top of the pile, and crack the egg into it.
  • Mix the egg into the flour.
  • Add enough water to the mixture to make a thick dough.
  • The consistency should be like bread dough.
  • In any case, don't add too much water--it shouldn't be like batter at all!
  • Turn the dough out onto the flour-dusted counter, and form into a ball.
  • (It helps to flour your hands first).
  • Place the dough into the oiled bowl and cover with plastic wrap (cellofane).
  • Let stand 1 hour.
  • Meanwhile mix all ingredients for filling and place in the fridge.
  • Next, remove dough and place on flour-dusted counter (or work surface).
  • Knead a bit and flatten until very thin (but not see-through or falling apart).
  • Using a large, round cookie-cutter (or bottom of coffee can or top of glass) cut three-inch rounds.
  • Don't place them on top of each other, as they could stick together!
  • Knead the leftover pieces together again and cut more rounds until there's no dough left.
  • Spoon a bit of the filling into the center of each round and fold in half (to make a semi-circle shape).
  • Seal edges with a bit of water, and use tongs of a fork to decorate the edge.
  • To prepare, either steam the dumplings (if you have a steamer) for 15 mins, or boil for 10 mins.
  • If you boil, add some oil to the water and don't overcrowd the pan--make them in batches.
  • If you like, you can fry the dumplings in a skillet or wok to brown them before serving.
  • Handle gently!

1/2 pound firm tofu
1/2 cup coarsely grated carrots
1/2 cup shredded Napa cabbage
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped scallions
2 teaspoons finely minced fresh ginger
1 tablespoon chopped cilantro leaves
1 tablespoon soy sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
1 egg, lightly beaten
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Bowl of water, plus additional water for steamer
35 to 40 small wonton wrappers
Non-stick vegetable spray, for the steamer

Steps:

  • Preheat the oven to 200 degrees F.
  • Cut the tofu in half horizontally and lay between layers of paper towels. Place on a plate, top with another plate, and place a weight on top (a 14-ounce can of vegetables works well). Let stand 20 minutes. After 20 minutes, cut the tofu into 1/4-inch cubes and place in a large mixing bowl. Add the carrots, cabbage, red pepper, scallions, ginger, cilantro, soy sauce, hoisin, sesame oil, egg, salt, and pepper. Lightly stir to combine.
  • To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the tofu mixture in the center of the wrapper. Shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.
  • Using a steaming apparatus of your choice, bring 1/4 to 1/2-inch of water to a simmer over medium heat. Spray the steamer's surface lightly with the non-stick vegetable spray to prevent sticking. Place as many dumplings as will fit into a steamer, without touching each other. Cover and steam for 10 to 12 minutes over medium heat. Remove the dumplings from the steamer to a heatproof platter and place in oven to keep warm. Repeat until all dumplings are cooked.

¼ cup white sugar
4 ½ cups rice flour, divided
½ cup solid vegetable shortening, divided

1 ½ pounds shredded cooked chicken meat
¼ cup soy sauce
2 teaspoons white sugar
½ cup diced green onion
1 pinch salt and black pepper to taste
1 teaspoon cornstarch, if needed

Steps:

  • Dissolve yeast in the water; stir in the sugar and beat in 2 1/2 cups of rice flour to make a soft sponge. Set aside in a warm place to double in bulk, about 40 minutes. Mix in 2 more cups of rice flour and 1/4 cup of shortening and place the dough on a greased work surface; knead in the remaining 1/4 cup of shortening to make a smooth dough. Cut the dough into 15 equal-sized pieces; form each piece into a ball.
  • Heat the vegetable oil in a skillet over medium heat; cook and stir the onion and garlic in the hot oil until translucent, about 5 minutes. Stir in the chicken, soy sauce, 2 teaspoons of sugar, green onion, salt, and pepper. If the mixture is juicy, add cornstarch to thicken.
  • Working on a lightly greased work surface, flatten a dough ball into a circle about 4 inches in diameter with the heel of your hand. Place about 1 tablespoon of filling into the center of the dough ball, bring the edges of the dough together at the top, and pinch and twist to seal in the filling. Place each filled dumpling onto waxed paper with the pinched seal at the bottom while you finish the rest of the dumplings.
  • Spray a multi-layered bamboo steamer with cooking spray, place the steamer on top of a large saucepan, and pour in water to several inches below the steamer. Bring the water to a boil.
  • Working in several batches, place 3 or 4 filled buns into each steamer layer without letting the buns touch each other or the edge of the steamer, cover the steamer, and let the buns steam over medium-low heat until puffy and the dough is springy, about 15 minutes per batch. Serve warm.

Steps:

  • Lightly beat the egg white in a large bowl. Add the shrimp, jicama, scallions, cornstarch, rice wine, sesame oil, 3/4 teaspoon salt, the sugar and pepper. Stir well until the mixture starts to thicken, about 1 minute; cover and refrigerate until very cold, about 1 hour.
  • Set 1 dumpling wrapper on a clean surface (keep the rest covered with a damp paper towel so they don't dry out). Stir the shrimp mixture, then scoop 1 heaping teaspoonful onto the center of the wrapper. Dab a finger in a cup of cold water and moisten the edges of the wrapper. Steps:

Steps:

Steps:

  • Prepare the dumplings by heating a large, non-stick wok over medium-high heat. Swirl in the canola and sesame oils and add ginger and garlic. Stir fry for about 10 seconds and stir in mushrooms and cabbage for 3 minutes.

1 1/3 cups all-purpose flour
1/2 teaspoon salt
3/4 cup boiling water
6 ounces shrimp, finely chopped
1 1/2 ounces canned water chestnuts, finely chopped
2 teaspoons light soy sauce
1 teaspoon sugar
2 teaspoons cornstarch
1 pinch pepper

Steps:

  • Sift flour and salt into a bowl of mixer fitted with the dough paddle and quickly add the boiling water.
  • Mix until springy.
  • When cool enough to touch, knead a few times on an oiled surface.
  • If you do not have a mixer, after you have added the water to the flour/salt work the dough with the handle of a wooden spoon until it is cool enough to knead by hand.
  • Then knead on an oiled surface until springy.
  • Cover with a damp cloth and set aside.
  • Mix shrimp, water chestnuts, soy sauce,sugar and cornstarch with your fingers until sticky.
  • Refrigerate for 30 minutes.
  • Roll the dough out into a long sausage and cut off pieces (approx 14" long and into 16 pieces).
  • Roll out each piece into a thin round.
  • Place a teaspoon of the filling on each round and pinch the edges together (press with a fork to decorate the edges).
  • Oil your steamer and place the dumplings in it and steam over high heat for 8-9 minutes.
  • Serve with a spicy chili sauce or soy mixed with hot mustard.

1 package Round dumpling skins (you can use square rounded off or your own homemade wrappers.
1/2 pound prawns
12 Chinese mushrooms, small or use canned but squeeze dry
1/2 pound ground pork
2 green onion, finely chopped
1 small egg
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon sesame oil
2 teaspoons thin soy sauce
1 teaspoon oyster sauce
1 tablespoon cornstarch

Steps:

  • Shell, devein, wash, and drain prawns. Dice into bits. Boil mushrooms in water for 10 minutes, rinse, squeeze dry, cut off and discard stems; then chop into very small pieces. Combine the pork, mushrooms, prawns, and onion. Put mixture on chopping board and chop 10 to 15 strokes with cleaver. (Use a sharp knife if you don't have a cleaver.) Texture, when you're finished, should be slightly finer than hamburger. Add "seasoning" and the egg to the pork mixture. Mix well. To make dumpling, place 1 Tbsp filling in the center of a dumpling skin. Then bring all sides of the skin up to cover the meat as much as possible, without closing. The top of the dumpling is left open. Cook dumplings by steaming for 30 minutes. Use as many as you need, with the rest, cool, wrap, freeze. Reheat after thawing by steaming 10 minutes. Serve with soy sauce, hot sauce, or mustard.

1 tablespoon peeled and grated fresh ginger
1 tablespoon Shaohsing rice wine or dry sherry
1 tablespoon light soy sauce
2 teaspoons cornstarch
1 teaspoon toasted sesame oil
3 fresh shiitake mushrooms, stemmed and finely chopped
1 large scallion, green part only, finely chopped
Sea salt
Ground black pepper
10 square wonton wrappers
15 goji berries (can substitute frozen peas and carrots)
Vegetable oil, optional if not using perforated parchment
1 tablespoon hot Guilin chili sauce
1 tablespoon light soy sauce

Steps:

  • For the filling: In a large bowl, combine the pork, ginger, rice wine, soy sauce, cornstarch, sesame oil, mushrooms and scallions. Sprinkle with salt and pepper and mix well.
  • For the dumplings: Take 1 wonton wrapper and place 1 heaping teaspoon of the filling in the center. Then gather up the sides of the wonton wrapper and mold around the filling into a ball shape, leaving the center exposed. Dip your finger in some water and run it around the top of the wonton wrapper. Fold the excess wrapper down and pinch the wonton wrapper around the filling firmly to prevent it from opening up and separating from the filling when cooked. Top each dumpling with a goji berry.
  • Oil the bottom of a bamboo steamer and/or line it with a piece of perforated parchment paper. Place the dumplings in the steamer, cover with a lid and place over a pan or wok of boiling water (making sure the water does not touch the bottom of the steamer). Steam the dumplings until cooked, 7 to 8 minutes.
  • For the dipping sauce: Meanwhile, combine the chili and soy sauces in a bowl. Serve with the dumplings.

1 cup milk, plus
1 tablespoon milk
1 (1/4 ounce) package yeast
1/8 teaspoon salt
2/3 cup butter or 2/3 cup clarified butter
2 eggs

  • Heat milk a bit and dissolve yeast.
  • Make a well in the flour and pour the yeast into the well.
  • Let rest 1/2 hour.
  • Add remaining milk salt and eggs.
  • Beat vigorously til bubbles form.
  • Knead well.
  • Cover and put dough in a warm place Let rise for 1 hour.
  • Cut off 1/2 fist size pieces on floured surface let rise 15 more minutes.
  • In a deep skillet or dutch oven melt butter and add warm salted water to a depth of 3/4 inch.
  • Add dumplings arranged in one layer touching each other.
  • Put lid on pot, seal edges where lid rests with damp cloths to insure no steam escapage.
  • Cook on med low heat about 20 minutes Dumplings should have a highly desirable brown crust on bottom. May be served with sauerkraut or canned fruit.

1 lb boneless skinless chicken thighs, trimmed of fat
1 cup sliced fresh mushrooms
1 small onion, cut into chunks
2 tablespoons hoisin sauce
2 tablespoons prepared mustard
1 tablespoon sriracha sauce or 1 1/2 teaspoons hot pepper sauce
1 (14 ounce) package wonton wrappers
1 egg
1 teaspoon water
1 cup soy sauce
1 teaspoon ground ginger
1 green onion, sliced
1/4 teaspoon crushed red pepper flakes

Steps:

  • Place chicken thighs in a medium saucepan and add just enough water to cover completely. Bring to a simmer and cook for 20 minutes, or until cooked through. Remove chicken and allow to cool slightly, reserving cooking liquid.
  • Combine soy sauce, ginger, pepper flakes, and green onion in a small jar, shake well and set aside.
  • Cut chicken into chunks and place in bowl of food processor. Add mushrooms, onion, hoisin, mustard, and sriracha. Process until ground and well combined.
  • Beat egg with the 1 tsp water. Working in small batches, place 1 tbsp of meat mixture on center of each wonton wrapper. Brush two edges with egg wash and fold up sides, corner to corner, to seal well around filling. Fold top corner over and secure with a little more egg wash if desired.
  • Bring reserved cooking liquid to simmer in a pan with a steamer basket. Spray basket with cooking spray and place dumplings in basket.
  • Cover with lid and steam 8-10 minutes.
  • If you would rather cook these like potstickers with a crispy bottom, spray a shallow pan with cooking spray and set over medium heat. Set dumplings directly in pan and pour hot cooking liquid around dumplings to about 1/2 inch deep. Cover and cook 5-6 minutes or until bottoms are brown and crispy. Don't move them around during cooking or they will stick and tear.
  • Serve with sauce.

3 tablespoons vegetable oil
boiling water
3 tablespoons soy sauce

2 tablespoons fresh lemon juice
1 tablespoon asian fish sauce
1 scallion, thinly sliced
1 1/2 lbs medium shrimp, shelled and deveined
1 1/2 tablespoons cornstarch, plus more for dusting
2 tablespoons soy sauce
1 tablespoon fresh lemon juice
1 large egg, beaten
1 teaspoon finely grated lemon zest
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1/2 cup diced peeled jicama (1/4-inch)
2 scallions, thinly sliced
45 gyoza skins (see Note)
green leaf lettuce leaf, for steaming

Steps:

  • MAKE THE DOUGH (IF DOING SO): combine all ingredients, adding boiling water as needed until you get a sticky but workable dough. roll out into a thin sheet, cutting into 3 inch rounds.
  • MAKE THE SAUCE: In a small bowl, combine the soy sauce with the water, lemon juice, fish sauce and scallion.
  • MAKE THE DUMPLINGS: Very coarsely chop two-thirds of the shrimp and transfer to a food processor. Add 1 1/2 tablespoons of the cornstarch, the soy sauce, lemon juice, egg, lemon zest, salt and pepper and process until very finely chopped. Scrape into a large bowl. Cut the remaining shrimp into 1/3-inch pieces and add to the bowl. Mix in the jicama and scallions.
  • Dust a baking sheet with cornstarch. Lay 4 gyoza wrappers on a work surface; keep the rest covered with plastic wrap. Moisten the edges of the wrappers with water. Place a level tablespoon of filling on one side of each wrapper and fold in half to form half-moons. Press all around the filling to release any air pockets and to seal. Lift each dumpling by the sealed edge, transfer it to the baking sheet and press down lightly to flatten the bottom; the dumpling should be standing with the sealed side up on the baking sheet. Repeat with the remaining wrappers and filling.
  • Fill a wok or a very large skillet with 2 inches of water and bring to a boil. Line a double-tiered bamboo steamer with lettuce leaves and arrange half of the dumplings in the steamer without crowding. Cover and steam over moderate heat until firm and cooked through, about 12 minutes. Steam the remaining dumplings. Serve the dumplings right away, passing the dipping sauce at the table.

1 cup diced (1/4 inch) peeled jicama

60 wonton wrappers (from two 12- to 14-ounce packages), thawed if frozen
2 tablespoons black sesame seeds, toasted
2 tablespoons white sesame seeds, toasted
Special equipment: a 2 1/2-inch round cookie cutter; a pasta pot with a deep perforated colander-steamer insert or a metal steamer
Accompaniment: soy dipping sauce

Steps:

  • Make filling:
  • Lightly whisk egg white in a large bowl, then whisk in ginger, garlic, peanut oil, sesame oil, soy sauce, cornstarch, sugar, and salt. Add jicama, scallion, and pork and mix together with your hands until combined well.
  • Assemble dumplings:
  • Separate wonton wrappers and restack in piles of 10. Cut through each stack with cookie cutter and discard trimmings. Arrange 6 rounds on a work surface (keep remaining rounds covered with plastic wrap) and mound a scant tablespoon filling in center of each. Lightly moisten edge of wrappers with a finger dipped in water. Working with 1 at a time and leaving dumpling on flat surface, gather edge of wrapper around side of filling, pleating wrapper to form a cup and pressing pleats against filling (leave dumpling open at top). Flatten filling flush with edge of wrapper with wet finger and transfer dumpling to a tray. Make more dumplings in same manner with remaining rounds and filling.
  • Steam dumplings:
  • Generously oil bottom of colander-steamer insert and bring a few inches of water to a boil in pot so that bottom of insert sits above water. Arrange 10 dumplings, about 1/2 inch apart, in insert and steam over moderate heat, covered, until dough is translucent and filling is just cooked through, about 6 minutes.
  • Stir together black and white sesame seeds and sprinkle over dumplings. Serve immediately.
