Time 1h14m

Yield 4

Number Of Ingredients 15

4 bone-in chicken thighs, with skin
1 teaspoon sea salt, or to taste
1 (2 inch) piece fresh ginger, thinly sliced, or to taste
3 green onions, thinly sliced with white and green parts separated
¼ cup water
1 cup coconut juice
1 ½ tablespoons fish sauce
1 tablespoon rice vinegar
1 tablespoon fresh lime juice
4 Thai chiles, chopped
5 sprigs cilantro, stems and leaves separated
2 cloves garlic, chopped
1 (1 inch) piece fresh ginger, coarsely chopped
1 teaspoon palm sugar
2 ½ tablespoons vegetable oil

Steps:

  • Season chicken thighs with sea salt and spread ginger slices and green parts of the green onion on top. Arrange each pair of chicken thighs in an even layer in 2 shallow, heatproof bowls.
  • Fill a large pot with 4 to 5 inches of water and insert two steam racks inside. Set the bowls on the steam rack and pour 1/4 cup water and coconut juice evenly between the 2 bowls. Cover pot and bring water at the bottom of the pot to a boil; reduce heat to a simmer. Cook chicken breasts until no longer pink at the bone and the juices run clear, about 35 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Combine fish sauce, rice vinegar, lime juice, Thai chiles, cilantro stems, garlic, chopped ginger, and palm sugar in a food processor; pulse mixture until well combined. Transfer the sauce mixture into a medium bowl; add green parts of the green onion.
  • Heat vegetable oil on a skillet over medium heat until smoking, about 4 minutes; pour oil into the sauce mix.
  • Remove the 2 bowls from the pot. Discard ginger and green onion pieces.
  • Drain remaining coconut juice liquids, through a sieve, into the sauce mixture. Pour over chicken, and garnish with cilantro leaves.

TEA-SOAKED DRUNKEN CHICKEN WITH CILANTRO-SCALLION OIL

Tea-Soaked Drunken Chicken With Cilantro-Scallion Oil image

Made from fermented glutinous brown rice, Shaoxing wine is what gives this dish its slightly sweet flavor and nutty fragrance. The dish relies heavily on the wine's aroma and flavor, so if you can't find it, substitute with a good quality dry sherry (a Manzanilla variety will work well). Here, the chicken is poached instead of simmered, guaranteeing a moist bird that soaks in the flavor of its cooking liquid. But if it's a more intense flavor you're looking for, allow the chicken to chill in the poaching liquid overnight.

Time 35m

Yield 4 servings

Number Of Ingredients 13

1 1/2 cups short-grain brown rice
2 cups Shaoxing wine (or dry sherry)
5 unflavored black tea bags (such as English breakfast)
3 tablespoons kosher salt, plus more for seasoning
3 tablespoons turbinado sugar
1 (5-inch) piece ginger, scrubbed and thinly sliced
1 tablespoon whole black peppercorns
4 boneless, skinless chicken breasts (about 1/2 pound each)
1/2 cup coarsely chopped cilantro, leaves and tender stems
1/2 cup coarsely chopped scallions
1/2 cup safflower or other neutral oil
1 tablespoon lime juice
Black pepper

Steps:

  • In a medium saucepan, combine rice and 2 1/4 cups water and bring to a boil. Cover and simmer gently over low heat until all of the liquid is absorbed, 20 minutes. Turn off the heat and let stand covered for 10 minutes. Fluff with a fork.
  • As rice cooks, combine wine, tea bags, salt, sugar, ginger, peppercorns and 2 cups of water in another medium saucepan, and mix well. Add chicken (make sure it is completely submerged) and bring to a boil. Cover, turn off the heat and let stand until cooked through, about 15 minutes (poaching time may vary by a few minutes if chicken breast is smaller or larger than 1/2 pound). Transfer chicken to a cutting board and let rest for at least 5 minutes. Discard the poaching liquid.
  • Meanwhile, in a small bowl, combine cilantro, scallions, oil and lime juice and season with salt and pepper. Mix well.
  • Slice chicken and serve with brown rice and cilantro-scallion oil.

Tips:

  • Choose the right chicken: Use a whole chicken for a more flavorful dish. If you're using chicken breasts, be sure to pound them thin so they cook evenly.
  • Use fresh cilantro: Fresh cilantro is essential for this recipe. If you can't find fresh cilantro, you can use dried cilantro, but it won't be as flavorful.
  • Don't overcook the chicken: The chicken is cooked when it reaches an internal temperature of 165 degrees Fahrenheit. If you overcook it, it will be dry and tough.
  • Let the chicken rest: Before you cut into the chicken, let it rest for a few minutes. This will help the juices redistribute throughout the meat, making it more tender and flavorful.
  • Serve with your favorite sides: Steamed chicken with cilantro oil is a versatile dish that can be served with a variety of sides. Some popular options include rice, noodles, vegetables, and salads.

Conclusion:

Steamed chicken with cilantro oil is a healthy and flavorful dish that is perfect for a weeknight meal. It's easy to make and can be customized to your liking. Whether you serve it with rice, noodles, or vegetables, this dish is sure to be a hit.
