Yield 4 servings

Number Of Ingredients 14

1 small onion, quartered
1 jalapeno, quartered, seeds optional
1 garlic clove, smashed
4 medium tomatillos, (about 8 ounces) husked, rinsed, and coarsely chopped
1/2 Hass avocado, peeled, seeded, and cut into chunks
1 1/4 teaspoons kosher salt
1/4 cup loosely packed fresh cilantro leaves, coarsely chopped
1 tablespoon olive oil
1 teaspoon chipotle or blended chili powder
1 teaspoon kosher salt
1 pound medium shrimp (about 20), peeled and deveined
8 corn tortillas
8 sprigs cilantro for garnish
2 limes, cut into wedges

Steps:

  • Put the onion, jalapeno, and garlic in a food processor and finely chop. Add the tomatillos, avocado, and salt and pulse until chopped but still chunky. Transfer to a bowl and stir in the cilantro.
  • Heat a stovetop or outdoor grill to medium-high. Mix the olive oil, chipotle or chili powder, and salt in a large bowl. Add the shrimp and toss to coat. Grill the shrimp until translucent, about 1 1/2 to 2 minutes on each side.
  • Grill tortillas, until slightly charred and pliable, about 20 seconds per side. (Alternatively, wrap in a damp paper towel and heat in a microwave.) Spoon sauce on the tortilla, then top with about 2 or 3 shrimp and a sprig of cilantro. Serve 2 tacos per person, with a lime wedge on the side.

Provided by davidv

Number Of Ingredients 29

Steak:
1 2 lb-2-1/2 lb flank steak
2 cloves of garlic
2/3 cup fresh cilantro leaves
Juice of 2 limes
1/4 cup olive oil
1/2 tsp kosher salt
1/8 tsp ground black pepper
1 jalapeño, seeded and quartered
1 tsp chili powder
Chipotle Slaw:
1 cup sour cream
2 Tbsp milk
2 tsp chipotle pepper in adobo (or more, to taste), chopped
1/2 Tbsp white vinegar
6 cups shredded cabbage
Avocado Salsa:
3 avocados, diced
1/3 cup red onion, minced
Juice of 4 limes
1/2 of a large jalapeño, seeded and minced
1 tsp garlic, minced
1/3 fresh cilantro leaves, chopped
2 Tbsp extra virgin olive oil
1 plum tomato, seeded and diced
1/2 tsp kosher salt
1/8 tsp ground black pepper
You will also need:
1 (10-12) package of 8-inch soft taco shells

Steps:

  • To prepare the steak, first make a marinade with the garlic, cilantro, lime juice, olive oil, salt, pepper, jalapeño, and chili powder. Combine the ingredients in the bowl of a food processor and process until finely minced. Place the flank steak in a large zip-top plastic bag, pour in the marinade, and squeeze out any excess air before sealing. Allow the steak to marinate in the refrigerator for at least two hours; do not exceed 8 hours. To prepare the slaw, combine the sour cream, milk, chipotle pepper, and vinegar in a large bowl and whisk until combined. Add the cabbage and stir until it's completely coated with dressing. To prepare the salsa, combine all the ingredients in a medium-sized bowl; toss until combined. (If kept refrigerated, this can be made up to 2 hours prior to serving.) To make the tacos, preheat the grill and set the temperature to medium-high. Grill the steak for 8 minutes on each side, or until your desired degree of doneness. Let it rest for 10 minutes before cutting, diagonally across the grain, into thin slices. Place 4-5 slices of steak in a taco shell, top with approximately a quarter cup of salsa and the same amount of slaw. Fold up the shell and enjoy!

Time 40m

Yield 4 servings

Number Of Ingredients 13

1 1/2 teaspoons chipotle chile powder
1 teaspoon ground cumin
2 navel oranges, 1 zested
Kosher salt
4 5-ounce skinless salmon fillets, cut into strips
1 avocado, diced
2 tablespoons finely diced red onion
1/2 cup fresh cilantro, chopped, plus more for topping
1/2 jalapeño pepper, seeded and finely diced
1 lime, 1/2 juiced and 1/2 cut into wedges
Vegetable oil, for grilling
1 ear of corn, shucked
12 corn tortillas

Steps:

  • Preheat a grill to medium high. Whisk together the chipotle powder, cumin, orange zest and 1/2 teaspoon salt. Toss with the salmon and set aside.
  • Meanwhile, cut off the tops and bottoms of the oranges with a sharp knife. Place cut-side down, then cut off the peel and white pith. One at a time, hold each orange over a bowl and cut along the membranes to remove the segments, letting them fall into the bowl. Squeeze the juice from the membranes into the bowl. Chop the orange slices into small pieces, then return to the bowl. Add the avocado, red onion, cilantro, jalapeño, lime juice and a pinch of salt; toss well.
  • Lightly oil the grill and add the corn. Grill, turning occasionally, until charred all over, 12 to 15 minutes. After a few minutes, add the salmon to the grill and cook until well marked and charred at the edges, about 2 to 4 minutes per side, depending on the thickness. Grill the tortillas until marked and warmed, 20 to 30 seconds per side.
  • Cut the corn kernels off the cob and toss with the avocado-orange salsa. Divide the tortillas among plates and top with the salmon, salsa and more cilantro. Serve with the lime wedges.

GRILLED MAHI MAHI WITH AVOCADO-CHILE SALSA RECIPE - (4.3/5)

Grilled Mahi Mahi With Avocado-Chile Salsa Recipe - (4.3/5) image

Provided by courtneyj87

Number Of Ingredients 14

FOR THE SALSA:
1 ripe avocado, cut into 1/4- to 1/2-inch chunks
2 plum tomatoes, cut into 1/2-inch chunks
1 cup minced red onion
1 jalapeño pepper or serrano chile, seeded and minced
1/2 cup minced fresh cilantro
1 lime, juiced
1/2 teaspoon kosher salt
FOR THE FISH:
1 1/2 pounds mahi mahi, cut into 4 pieces
1 tablespoon extra-virgin olive oil
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper, to taste

Steps:

  • For the salsa, combine avocado, tomatoes, onion, chile, cilantro, lime juice and salt in a large, nonreactive bowl (glass, stainless steel or glazed ceramic). Mix gently with a spoon. Set aside. You can prepare this salsa up to a few hours before serving and store it in the refrigerator in a covered container. For the fish, combine olive oil, lime juice, salt and pepper. Pour over fish and marinate for 20-30 minutes. Grill the fish for 3-4 minutes each side. Spoon the salsa on top of the fish.

Tips:

  • For the best results, use high-quality, well-marbled steak. Flank steak or skirt steak are good options.
  • Make sure the steak is thinly sliced against the grain for more tender tacos.
  • To make the chipotle slaw, use a food processor to shred the cabbage and carrots. This will save you time and effort.
  • If you don't have any chipotle peppers in adobo, you can substitute 1 teaspoon of chipotle powder.
  • When making the avocado salsa, use ripe avocados that are soft to the touch. This will give the salsa a creamy texture.
  • If you don't have any cilantro, you can substitute parsley or basil. However, cilantro will give the salsa the most authentic flavor.
  • Be sure to warm the tortillas before serving. This will make them more pliable and easier to fold.

Conclusion:

These steak tacos with chipotle slaw and avocado salsa are a delicious and easy-to-make meal that is perfect for any occasion. The steak is tender and flavorful, the slaw is creamy and tangy, and the salsa is fresh and zesty. These tacos are sure to be a hit with your family and friends.
