2 tablespoons all-purpose flour
1 cup chicken stock
1/4 to 1/3 cup cream or half-and-half, eyeball it
8 ounces blue cheese crumbles
2 to 3 tablespoons chopped sage leaves
2 tablespoons chives, chopped, a palm full
2 cups arugula, a small bunch, cleaned, trimmed and shredded

Tips:

  • Tenderize the steak: Use a meat mallet or fork to tenderize the steak before cooking. This will help break down the muscle fibers and make the steak more tender.
  • Use a flavorful marinade: Marinating the steak in a flavorful mixture of olive oil, garlic, herbs, and spices will add flavor and moisture to the meat.
  • Cook the steak over high heat: Searing the steak over high heat will create a flavorful crust and lock in the juices.
  • Let the steak rest: After cooking, let the steak rest for a few minutes before slicing. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Cook the spaghetti al dente: Al dente pasta is cooked just until it is tender but still has a slight bite to it. This will help prevent the pasta from becoming mushy when it is combined with the steak and sauce.
  • Use a flavorful sauce: A flavorful sauce will help to enhance the taste of the steak and spaghetti. You can use a simple tomato sauce, a creamy sauce, or a pesto sauce.

Conclusion:

Steak strips with spaghetti is a delicious and easy-to-make meal that is perfect for a weeknight dinner. By following the tips above, you can ensure that your steak and spaghetti dish is flavorful, tender, and satisfying.
