Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 11

1 1/2 pounds flank steak
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground pepper
1 1/2 tablespoons unsalted butter
1/2 onion, finely chopped
1 1/2 tablespoons all-purpose flour
1 1/2 cups whole milk
2 10-ounce packages frozen chopped spinach, thawed and squeezed dry
3/4 cup grated parmesan cheese
1/2 teaspoon grated lemon zest
1/4 teaspoon freshly grated nutmeg

Steps:

  • Heat a grill pan over medium-high heat. Pat the steak dry and brush lightly with olive oil. Season with 11/2 teaspoons salt and 2 to 3 teaspoons pepper. Cook, turning once, 10 to 13 minutes total for medium rare. Transfer the steak to a cutting board to rest, about 10 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the flour and cook, stirring, 1 minute. Remove from the heat and gradually whisk in the milk. Return to medium heat and simmer, whisking, until slightly thickened, about 2 minutes.
  • Stir in the spinach, 1/4 cup water, 1/2 cup parmesan, the lemon zest and nutmeg and cook, stirring occasionally, until the sauce thickens and the spinach is tender, about 10 minutes. Thin with water, if needed. Stir in the remaining 1/4 cup parmesan and salt to taste.
  • Thinly slice the steak and serve with the spinach.

SPINACH SALAD WITH SESAME DRESSING

Spinach salad with sesame dressing image

A nutrient-rich vegetable side dish with Asian flavours like miso, sesame seeds and yuzu or lime juice

Provided by Chelsie Collins

Categories     Side dish

Time 6m

Number Of Ingredients 7

900g spinach
2 tbsp tahini
½ tbsp miso glaze or white miso paste
1 tsp sesame oil
1 tsp golden caster sugar
2 tsp Yuzu juice or lime juice
1 tbsp toasted sesame seeds

Steps:

  • Boil the kettle and put the spinach in a large colander set over the sink. Pour over enough boiled water to just wilt the leaves (you may need to do this in batches), then leave to cool. When cool, squeeze the spinach to get rid of the excess water.
  • Make your dressing by combining all the remaining ingredients (except the sesame seeds) together with 2 tbsp water. (Add a little more water if you want a runnier consistency.) Pour a little dressing over the spinach and toss to coat, then drizzle over the remainder. Sprinkle over the sesame seeds and serve.

Tips:

  • Use quality ingredients: The better the quality of your ingredients, the better your salad will taste. Look for fresh, organic produce and high-quality steak.
  • Don't overcook the steak: Steak is best cooked to medium-rare or medium, so that it is still tender and juicy. Overcooked steak will be tough and dry.
  • Use a good dressing: The dressing is what really brings the salad together, so make sure you use a flavorful one. The dressing in this recipe is made with sesame oil, soy sauce, rice vinegar, and honey, and it is delicious.
  • Add some crunch: The spinach and sesame seeds in this salad add a nice crunch that contrasts with the tender steak. You could also add other crunchy vegetables, such as bell peppers, carrots, or cucumbers.
  • Serve immediately: This salad is best served immediately after it is made. The steak will start to toughen up if it sits for too long.

Conclusion:

This steak spinach sesame salad is a delicious and healthy meal that is perfect for a quick and easy lunch or dinner. It is packed with flavor and nutrition, and it is sure to please everyone at your table. So next time you are looking for a new salad recipe, give this one a try. You won't be disappointed!
