2 tablespoons butter
2 tablespoons vegetable oil
1 ½ pounds lean boneless beef round steak, cut into cubes
½ cup chopped onion
3 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
¼ teaspoon ground black pepper
4 cups beef broth
2 cups water
4 sprigs fresh parsley, chopped
2 tablespoons chopped celery leaves
1 bay leaf
½ teaspoon dried marjoram
1 ½ cups peeled, diced Yukon Gold potatoes
1 ½ cups sliced carrots
1 ½ cups chopped celery
1 (6 ounce) can tomato paste
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Melt butter and oil in a large skillet over medium heat until the foam disappears from the butter, and stir in the steak cubes and onion. Cook and stir until the meat and onion are browned, about 10 minutes. While beef is cooking, mix together flour, paprika, salt, and pepper in a bowl. Sprinkle the flour mixture over the browned meat, and stir to coat.
  • In a large soup pot, pour in the beef broth and water, and stir in the parsley, celery leaves, bay leaf, and marjoram. Stir in beef mixture, and bring to a boil. Reduce heat to medium-low, cover the pot, and simmer, stirring occasionally, until meat is tender, about 45 minutes.
  • Mix in the potatoes, carrots, celery, tomato paste, and corn; bring the soup back to a simmer, and cook uncovered, stirring occasionally, until the vegetables are tender and the soup is thick, 15 to 20 minutes. Remove bay leaf and serve hot.

2 (10 1/2 ounce) cans cream of mushroom soup (fat free is ok)
1 (10 1/2 ounce) can water
1 medium onion

Steps:

  • Cut off fat from round steak and cut into 3 x 3 inch pieces.
  • Whisk water and mushroom soup together in a bowl, then pour just enough to thinly coat the bottom of a 13 x 9 pan.
  • Place the pieces of round steak evenly around the pan.
  • Cut onion into slices and place them evenly on top of the meat.
  • Pour the rest of the mushroom soup mix on top of the round steak and onions.
  • Cover with foil and bake at 325 degrees for 2 1/2 to 3 hours.

1 teaspoon salt

1 pound London broil steak
3 tablespoons olive oil
1 small onion, chopped
1/2 pound white mushrooms, sliced
1 clove garlic, minced
4 cups beef broth
1/4 cup jarred sliced pickled jalapenos
1 cup crushed canned tomatoes
1 (11-ounce bag) bag baby spinach
1/2 cup sour cream
3 cups tortilla chips, crumbled

Steps:

  • Preheat a grill to medium-high. In a small bowl, combine cumin, garlic powder, thyme, salt, and pepper. Rub the spice blend over all of the steak pieces along with 1 tablespoon of the oil. Let rest at room temperature, about 15 minutes.
  • Meanwhile, in a large pot, add the remaining 2 tablespoons of oil and heat over medium heat. Add the onions and saute until tender, about 4 minutes. Stir in the mushrooms and garlic and saute until mushrooms are tender, adding extra oil if needed. Pour in the broth, jalapenos and crushed tomatoes. Bring to a boil then reduce heat and simmer while beef cooks.

1/2 teaspoon pepper
4 (14 1/2 ounce) cans beef broth

From a cookbook called The Complete Guide to Country Cooking. This is the one of the best soups I have ever had! The paprika gives it a nice red color and it is very thick and filling on a cold winter's night.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons vegetable oil
1 1/2-2 lbs lean round steak, cut into 1/2 inch cubes
1/4 cup chopped onion (about 1/2 a small onion)
3 tablespoons flour
1 tablespoon paprika
1 teaspoon salt
1/4 teaspoon pepper
4 cups beef stock or 4 cups broth
2 cups water
1 bay leaf
1 teaspoon dried parsley
2 sprigs celery leaves, chopped
1/2 teaspoon dried marjoram
1 1/2 cups cubed peeled potatoes (about 2 medium)
1 1/2 cups sliced carrots (about 2 medium)
1 1/2 cups chopped celery (3-4 stalks)
1 (6 ounce) can tomato paste

Steps:

  • In a large saucepan, melt 1 tablespoon butter over medium heat; add 1 tablespoon oil. Brown half the beef. Remove from pan. Add remaining butter and oil. Brown remaining beef and onion. Return all meat to pan.
  • Combine flour, paprika, salt and pepper; sprinkle over beef and mix well. Stir in stock and water. Add bay leaf, parsley, celery leaves and marjoram; bring to a boil. Reduce heat; cover and simmer for 1 hour or until tender.
  • Add potatoes, carrots and celery. Cover and simmer for 30-45 minutes or until vegetables are tender and soup begins to thicken. Stir in tomato paste; simmer uncovered, for 15 minutes. Remove bay leaf before serving.

1 (15 ounce) can seasoned black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
8 ounces leftover steak strips, cut into bite-size strips
1 (6 ounce) can tomato sauce
1 small onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cup milk
2 tablespoons ground cumin
2 tablespoons fajita seasoning
1 tablespoon minced garlic
1 tablespoon lime juice
¼ teaspoon red pepper flakes
½ cup long-grain white rice
1 (8 ounce) package shredded Monterey Jack cheese
1 avocado - peeled, pitted, and sliced
1 cup tortilla chips

Steps:

  • Combine beef stock, black beans, tomatoes, steak, tomato sauce, onion, green bell pepper, red bell pepper, milk, cumin, fajita seasoning, garlic, lime juice, and red pepper flakes in a large pot over medium heat. Cover pot and simmer for 30 minutes. Add rice and cook until rice is tender, about 30 minutes.
  • Garnish soup with Monterey Jack cheese, avocado, and tortilla chips.

1 beef round steak
1 c flour
3 can(s) golden mushroom soup
2 can(s) water
oil

Steps:

  • 1. Cut your round steak into medium pieces.
  • 2. Mix some flour and pepper, dip the steak pieces into flour mixture and brown in oil.
  • 3. Place the browned steak pieces in a baking dish. Cover with 3 cans of golden mushroom soup and 2 cans of water.
  • 4. Bake at 250 degrees for 3-4 hours. (Makes good gravy for mashed potatoes)

1 (16 ounce) can whole kernel corn, drained
1 (6 ounce) can tomato paste
2 tablespoons beef bouillon granules
