Steps:

  • In 12-inch nonstick skillet, melt butter over medium-high heat. Cook onion in butter 3 to 4 minutes, stirring frequently, until tender; push to side of skillet.
  • Add beef steaks to skillet; sprinkle with salt and pepper. Cook 5 to 8 minutes, turning once, for medium doneness (160°F).
  • Spread pesto on cut sides of buns. Layer steaks, cheese, onion and tomato in buns.

1 pound beef top sirloin steak, cut into thin strips
1/8 teaspoon salt

3 plain bagels, split
1/3 cup cream cheese, softened
6 thick slices tomato

  • Preheat broiler. In a large skillet, heat oil over medium heat. Add beef; cook and stir 3-5 minutes or until browned; drain. 1 tablespoon softened butter, divided
1 tablespoon prepared pesto sauce, divided
1 slice provolone cheese
2 slices tomato
1 slice American cheese

Steps:

  • Spread one side of a slice of bread with butter, and place it, buttered side down, into a nonstick skillet over medium heat.
  • Spread the top of the bread slice in the skillet with half the pesto sauce, and place a slice of provolone cheese, the tomato slices, and the slice of American cheese onto the pesto.

4 beef tenderloin steaks, 1 1/4 inches thick and about 3 inches in diameter
1/8 teaspoon pepper

Steps:

  • If pesto is not refrigerated, freeze 15 minutes to firm. Heat gas or charcoal grill.
  • Make a horizontal cut into side of each steak, cutting to but not through opposite side and leaving about 1/2 inch uncut at each side, to form a pocket. Spoon firm pesto evenly into pockets. Secure openings with toothpicks. Sprinkle pepper over both sides of beef.
