Portobello

Categories     Sandwich     Cheese     Mushroom     Pepper     Marinate     Quick & Easy     Gourmet

Yield Serves 4

Number Of Ingredients 16

For marinade
5 tablespoons balsamic vinegar
6 large garlic cloves, minced
2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried thyme, crumbled
1/2 cup olive oil
1 1/2 pounds fresh Portobello mushrooms, stems trimmed flush with caps
For Gorgonzola butter
2 ounces Gorgonzola cheese (about 1/4 cup) at room temperature
1 tablespoon unsalted butter, softened
For red pepper vinaigrette
1 red bell pepper, roasted (procedure follows), or 1/3 cup chopped drained bottled roasted red peppers
1 tablespoon white-wine vinegar
1 tablespoon water
2 tablespoons extra-virgin olive oil
four 1/2-inch-thick slices crusty bread, cut diagonally from a large loaf
Garnish: fresh thyme leaves

Steps:

  • Make marinade:
  • In a small bowl whisk together marinade ingredients. Put half of mushroom caps and half of marinade in each of 2 large sealable plastic bags, arranging mushroom caps in one layer, and seal bags, pressing out excess air. Marinate mushrooms at room temperature, turning bags over several times, at least 1 and up to 2 hours.
  • Make Gorgonzola butter while mushrooms are marinating:
  • On a plate with a fork mash Gorgonzola and butter together until blended well.
  • Make red pepper vinaigrette:
  • In a blender blend vinaigrette ingredients with salt and pepper to taste until smooth and emulsified.
  • Prepare grill.
  • Grill one side of bread on a rack set 5 to 6 inches over glowing coals until golden, about 1 minute. (Alternatively, bread may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.) Divide bread, toasted sides down, among 4 plates. Spread soft side of bread with Gorgonzola butter.
  • Remove mushrooms from marinade and grill 2 to 3 minutes on each side, or until tender. (Alternatively, mushrooms may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.) Transfer mushrooms with tongs to a cutting board and slice thin.
  • Arrange warm mushrooms on toasts and spoon vinaigrette over each open-faced sandwich. Garnish sandwiches with thyme.
  • To roast peppers:
  • Using a long-handled fork char peppers over an open flame, turning, until skins are blackened, 2 to 3 minutes. (Or broil peppers on rack of a broiler pan under a preheated broiler about 2 inches from heat, turning every 5 minutes, until skins are blistered and charred, 15 to 25 minutes.) Transfer peppers to a bowl and let stand, covered, until cool enough to handle. Keeping peppers whole, peel them, starting at blossom end. Cut off tops and discard seeds and ribs. (Wear rubber gloves when handling chilies.)

SPINACH AND GORGONZOLA STUFFED FLANK STEAK

SPINACH AND GORGONZOLA STUFFED FLANK STEAK image

Categories     Beef     Cheese     Vegetable     Bake     Roast     Kid-Friendly     Quick & Easy     Dinner     Stuffing/Dressing     Fall     Winter

Yield 2 2

Number Of Ingredients 7

1 1 ½ to 2 pounds flank steak trimmed
3 tablespoon olive oil
1 shallot finely chopped
½ pound spinach, washed, stemmed and chopped
¾ cup fresh bread crumbs
¼ pound Gorgonzola or other blue cheese, crumbled
Salt and pepper

Steps:

  • Preheat oven to 375°. Butterfly the steak by using a long sharp knife holding it parallel to the work surface, cut through the long side of the steak, stopping about ½ inch from the opposite side. If the steak is already thin, just pound it with a mallet to ¼ inch thick. In a large skillet over medium heat add 1 tablespoon olive oil and sauté` the shallots until soft, 2 minutes. Add the spinach and cook until just wilted, about 2 to 3 minutes. Transfer to a colander. When cool enough to handle, squeeze out all the moisture from the spinach and transfer to a medium bowl. Stir in the bread crumbs and cheese. Season with salt and pepper. Place the steak on a sheet of plastic wrap. Smear the spinach mixture evenly over the steak, leaving about 1 inch border along the side edge. Beginning with the side near you and using the plastic wrap as an aid, rollup the steak, gently pressing on the filling. Tie the rolled steak with twine at 2-3 inch interval. Season the outside with salt and pepper. Heat the remaining 2 tablespoons olive oil in a large ovenproof skillet over medium high heat. Sear the roast on all sided, about 2 minutes per side. Place in the oven and roast for 20 to 25 minutes. Transfer to a cutting board, tend with aluminum foil and allow resting for 10 minutes. To serve, remove the twine from the roast and cut into ½ inch to 1 inch thick slices.

Tips:

  • Selecting the Right Steak: Choose a high-quality steak with good marbling, such as ribeye, strip loin, or tenderloin.
  • Tenderizing the Steak: To make the steak more tender, you can marinate it for several hours or overnight in a mixture of olive oil, herbs, and spices.
  • Cooking the Steak to Perfection: Cook the steak over high heat to create a flavorful crust, then reduce the heat and continue cooking until the steak reaches your desired doneness.
  • Searing the Steak: Before slicing, sear the steak in a hot skillet with butter to add extra flavor and color.
  • Preparing the Gorgonzola Sauce: Make sure the gorgonzola cheese is at room temperature before mixing it with cream and other ingredients. This will help create a smooth and creamy sauce.
  • Balancing the Flavors: Taste the sauce before serving and adjust the seasonings as needed. You may want to add a touch of salt, pepper, or herbs to enhance the flavor.

Conclusion:

The Steak Gorgonzola recipe is a delectable dish that combines the rich flavors of steak, gorgonzola cheese, and a creamy sauce. By following these tips, you can create a restaurant-quality meal at home. Whether you're cooking for a special occasion or a casual weeknight dinner, this steak dish is sure to impress your taste buds and leave you craving for more.
