- Wash then slice the potatoes, lengthwise, into 8 long strips.
- Place them in salted water, to cover, for at least 15 minutes. This will remove the surface starch.

- Rub the steak with the cut sides of the garlic. Brush the steak on both sides with the worcestershire sauce. season with salt and pepper. Set Aside at room temperature. quarter the potatoes, then cut into 1/4 inch thick slices.
- In frying pan heat 2 tbs. of the oil over med-high heat. Add the onion and potatoes. Cook tossing for 1 to 2 minutes to lightly coat the potatoes with oil. Then continue to cook, turning only occasionally until the slices are nicely browned, about 5 minutes, Season with salt and pepper. Remove to a bowl cover with foil.
- Wipe the pan clean, no need to rinse. Add the remaining oil to the pan and heat about 1 minute. Add the steak, cover, and cook undisturbed for 3 minutes, until browned on the bottom. - 1. Preheat oven to 425 degrees F, with the cookie sheet in the oven to get it hot. Once hot: Take the cookie sheet out of the oven and brush on a thin coat of olive oil (not the 3 T).
- 2. In a bowl, coat the potatoes with 3 T olive oil, dried herbs and the steak seasoning or salt and pepper, and mix well.
- 3. Spread the potatoes to the corners of the cookie sheet and cook for about 25 minutes (*could be sooner or later - check them as they cook - See note in step 4), turning once halfway through cooking. Serve once they are nicely browned to your liking!
- 4. Note: I find that if my wedges are thin, a total of 20-25 minutes is enough. If the wedges are thicker, a total of around 40 minutes works better.
