2 cups water
1 tablespoon beef bouillon granules
1/2 teaspoon pepper, divided
1/2 teaspoon chili powder
1/4 teaspoon red pepper flakes
1 small red pepper, thinly sliced
1/8 teaspoon garlic salt
1 medium onion, thinly sliced
4 tablespoons butter, divided
1/8 teaspoon salt
1 lb sirloin steak, cut into 1/2 inch thick strips
4 French rolls, split
4 slices havarti cheese
1/8 teaspoon chili powder
4 slices center-cut bacon

Steps:

  • In a large saucepan, combine water, bouillon, 1/4 teaspoon pepper, red pepper flakes, garlic salt, and chili powder, and bring to a boil.
  • Reduce heat, and simmer for 15-20 minutes.
  • Meanwhile, in a large skillet saute red pepper, and onion in 2 tablespoons butter until tender. Remove and keep warm.
  • Fry the bacon until fully cooked.
  • Sprinkle salt and remaining pepper over the beef.
  • In the same skillet that was used for onion, and red pepper, cook the beef in remaining butter over medium-high heat until no longer pink.
  • Spoon mixture onto roll bottoms, and top with onion mixture, cheese, and bacon.
  • Replace with roll tops.

1 small onion, finely chopped
1/2 cup vodka

Kosher salt and freshly ground black pepper
1 1/3 pounds beef sirloin cut into large bite-sized pieces, about 1-inch squares

1/3 cup brown sugar
1 tablespoon minced fresh ginger
1 tablespoon lime juice

1 1/2 pounds skirt steak, trimmed, sliced into 1 1/2-inch strips
2 cups roughly chopped fresh cilantro
2 cups roughly chopped fresh parsley
1/2 cup roughly chopped fresh mint
4 cloves garlic
4 green onions
2 Thai chiles
1 teaspoon fish sauce
1/2 teaspoon sugar
Juice of 1 lime
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
4 tablespoons mayonnaise

Steps:

  • For the marinade: Combine the soy sauce, brown sugar, ginger, lime juice and chile-garlic sauce in a saucepan over medium-low heat. Bring to a simmer and cook, stirring occasionally, for 10 minutes. Let cool.
  • Loosely thread the skirt steak strips onto the soaked skewers and place them in a deep pan. Top with the marinade. Cover and refrigerate for at least 2 hours.
  • For the chile-herb sauce: Combine the cilantro, parsley, mint, garlic, green onions and Thai chiles in a food processor and pulse until coarsely chopped, scraping down the bowl as needed. Add the fish sauce, sugar, lime juice, 1 teaspoon salt and 1/2 teaspoon pepper and pulse until combined. With the machine running, drizzle in oil; pulse for another 15 seconds. Add the mayonnaise and pulse to combine. Transfer to a bowl, cover and chill until ready to serve.
  • For cooking the steak: Prepare a grill for medium-high heat. Grill the steak for 2 to 3 minutes per side. Transfer to a plate and let rest. Serve with the chile-herb sauce on the side.

1 c. tomato juice
2 T vodka

1/4 t. hot pepper sauce
1/8 t. sugar

Steps:

  • Season steak well, cover and refrigerate. Mix all remaining ingredients in small saucepan, whisking to dissolve cornstarch. Bring to boil over medium heat, boil for 1 minute, remove from heat, cover and keep warm. Preheat grill to medium-high. Grill the steak over medium high heat approx. 7 minutes per side or to desired doneness, remove to platter, cover with foil and let rest for 10 minutes. Since I make this recipe for my BBQ get togethers, the amounts I have listed will make a ton of skewers, you might want to reduce the recipe to half and only use two steaks which should give you about 20-25 skewers (yield is only estimated) or make the complete recipe to feed a crowd! The amounts stated for the dipping sauce will yield about 4-1/2 cups, you might also want to reduce to half. To save time slice the meat a day ahead, and to make slicing easier, partially freeze the steaks before slicing for about 15 minutes. Plan ahead the dipping sauce needs to be chilled for a minimum of three hours before serving, or make 24 hours in advance, and the beef strips needs to marinade for 8 hours. This recipe also works well using pork strips! This is delicious, and a real crowd-pleaser!

3/4 cup olive oil (can use a little less oil if desired)
1 tablespoon grated lemon zest
1/2 cup fresh lemon juice
2 tablespoons fresh minced garlic (or to taste)
Tabasco sauce or red pepper, spice
1 teaspoon black pepper
2 lbs flank steaks (4, cut diagonally into 1/4-inch slices)
seasoning salt (or use white salt to taste)
50 (12 inch) wooden skewers
2 (16 ounce) containers sour cream
2 1/2 tablespoons horseradish (can use less to taste)
6 tablespoons fresh lemon juice
1 teaspoon lemon zest (can use more)
salt

Steps:

  • For the flank steak; in a bowl combine the oil, zest, lemon juice, garlic, Tabasco and black pepper; transfer to a large heavy-duty Ziploc plastic bag.
  • Add in the sliced beef and seal bag tightly; turn to coat the beef with marinade.

  • For the dipping sauce; combine all ingredients in a glass bowl; cover and chill a for about 3-24 hours before using.
  • Soak the wooden skewers in water for 30 minutes.
  • Remove the beef from marinade and discard the marinade.

  • Season each beef skewer with seasoned salt and more black pepper.
  • Place on a medium grill (about 350-375°F).
  • Grill until desired doneness (I usually grill them for about 8 minutes turning once or twice).
  • Serve with lemon dipping sauce.
  • Delicious!
