Yield Makes 4 servings

Number Of Ingredients 5

1/2 cup (1 stick) unsalted butter
6 large garlic cloves, thinly sliced
4 6- to 8-ounce beef tenderloin steaks (about 1 inch thick)
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil

Steps:

  • Melt butter in heavy small saucepan over medium heat. Remove from heat. Add garlic. Season to taste with salt and pepper. Let garlic butter stand 2 hours at room temperature.
  • Prepare barbecue (medium-high heat). Sprinkle steaks with salt and pepper. Grill steaks to desired doneness, about 4 minutes per side for medium-rare. Place pan of garlic butter at edge of grill to rewarm.
  • Transfer steaks to plates. Spoon garlic butter over. Sprinkle with herbs and serve.

Tips:

  • Tenderizing the Steak: Use a meat mallet or the back of a heavy knife to gently tenderize the steak. This helps break down the muscle fibers and makes the steak more tender and flavorful.
  • Marinating the Steak: Marinating the steak in a flavorful mixture of olive oil, garlic, herbs, and spices enhances its flavor and keeps it moist during cooking.
  • Grilling the Steak: Preheat the grill to high heat and sear the steak for a few minutes on each side to create a nice crust. Then, reduce the heat to medium-low and continue grilling until the steak reaches your desired doneness.
  • Resting the Steak: After grilling, let the steak rest for a few minutes before slicing. This allows the juices to redistribute throughout the steak, resulting in a more tender and flavorful cut.
  • Accompaniments: Serve the steak with a variety of accompaniments such as grilled vegetables, mashed potatoes, or a crisp salad to complete the meal.

Conclusion:

Steak de Burgo is a delicious and flavorful dish that is perfect for a special occasion or a casual weeknight meal.
