These baked egg bites are the perfect Copycat Starbucks Egg Bites!

6 large eggs
½ cup shredded sharp cheddar cheese
¼ cup low fat or full fat cottage cheese
¼ cup whole milk ricotta
¼ cup non-fat plain Greek yogurt
¼ tsp salt
¼ tsp pepper
10-15 baby spinach leaves (chopped)
3 slices cooked bacon (chopped small)

Steps:

  • Preheat your oven to 325°. Combine the following ingredients in your blender: eggs, shredded cheese, cottage cheese, ricotta cheese, Greek yogurt, salt, and pepper. Blend on low for 20 seconds.
  • Grease a muffin pan thoroughly. (I recommend using a silicone pan or silicone liners if you have them.)
  • Fill 7 of the muffin cups halfway full with the egg mixture. Then sprinkle half the chopped bacon and spinach over each cup. Then fill each of the 7 cups to the top with the remaining egg mixture, and then sprinkle the remaining bacon and spinach on top.
  • Bake your egg bites for 30 minutes. They will puff up quite large but they'll come back down once you take them out of the oven.
  • Enjoy immediately or store in the refrigerator for up to 5 days in a sealed container. To reheat, place in the microwave on 50% power for 45 seconds.

1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Swiss cheese
3 cooked bacon strips, chopped

  • Arrange an oven rack at the lowest rack setting; place a second rack in middle of oven. Place an oven-safe skillet on bottom oven rack; preheat oven and skillet to 300°. Meanwhile, in a small saucepan, bring 2 cups water to a boil., In a blender, puree first 4 ingredients until smooth, about 20 seconds. Line 6 muffin cups with foil liners. (Work quickly and carefully, pouring water away from you. Don't worry if some water is left in the saucepan.) 2 ciabatta rolls
6 large eggs
1/4 cup half-and-half or 1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon butter
6 slices cooked bacon
2 slices gouda cheese

Steps:

  • Crack six eggs into a medium sized bowl. Add half and half to both and whisk eggs until they are creamy. Season eggs with salt and pepper. Place butter into skillet over low heat when the butter has melted place beaten eggs into the skillet. Cook eggs stirring occasionally so that eggs are cooked thoroughly. Remove skillet from stove.
