I got this recipe from a friend I worked with long ago and have been serving it for years. It is great with chicken or pork. I like it all by itself. Leftovers are great. In fact, I just put one in the oven.

1 lb hot spicy breakfast sausage
1/2 cup rice
2 (1 1/4 ounce) envelopes lipton dry chicken noodle soup mix
1 large green pepper, diced
1 large onion, diced
1 cup thinly sliced celery (optional)
4 1/2 cups water

Steps:

  • Crumble sausage and brown in skillet or microwave until no longer pink. Drain and break up with fork until crumbled.
  • Bring 4 1/2 cups of water to a boil, add rice and chicken soup mix, cook for 7 minutes.
  • Add all ingredients into a large greased casserole dish and mix well. Cook uncovered at 350 degrees for 1 hour.

I needed to make a green St. Paddy's Day dessert that everyone would eat... very easy, family favorite! The cooking time listed here is the cooling time. These are best if eaten the same day they're made, but can be made ahead for special occasions.

1/4 cup butter
1 (10 ounce) package marshmallows
1 (2 1/4 ounce) jar green sugar candy sprinkles
6 cups Rice Krispies

Steps:

  • In a large saucepan, melt butter over low heat. Add the marshmallows and continue to stir until the marshmallows have completely melted. Add the green sprinkles, stir well. Remove from heat.
  • Stir in the Kellogg's Rice Krispies cereal coating them well with the melted marshmallow mixture.
  • Using a buttered or silicone spatula, press the mixture evenly into a 13 x 9 x 2 inch pan which has been buttered or sprayed with non-stick spray or lined with wax paper.
  • Cut into squares when the mixture cools.

1 lb sausage (ground)
1 sm onion (chopped)
1 green pepper (chopped)
3 stalks celery (chopped)
2-1/2 cups water
1 cup white rice
2 pkgs chicken noodle soup mix
1 sm jar pimento
1/2 pkg slivered almonds

Steps:

  • 1. Cover Rice with water and cook lie about 5 minutes. Add chicken flavored noodle soup mix and continue cooking about 10 more minutes
  • 2. Brown loose ground sausage, add pepper, onion, and celery.
  • 3. When rice is almost done, mix sausage mix, rice, pimentos and slivered almonds.
  • 4. Bake in a greased pan at 350° For approximately 45 minutes.

1 large onion

1/2 cup raw rice
4 1/2 cup water

  • Toss and brown sausage. Drain on paper towel; pour out grease. Saute in cut pieces of bell pepper, onion and celery. Boil envelopes of soup, rice and water for 7 minutes. Place all together in casserole with almonds. Bake at 350 for 1 hour, covered.
