1 bunch green onion, chopped (mostly white part)
4 tablespoons shallots, diced (optional)
1 1/2 cups mushrooms, sliced
1 tablespoon margarine
6 tablespoons sherry wine, divided
3 cups chicken broth, less salt
2 cups evaporated skim milk
4 ounces brie cheese, rind removed, cubed
2 tablespoons cornstarch
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1/4 teaspoon salt

Steps:

  • Sauté onions, shallots, and mushrooms in margarine for 5 minutes in a non stick skillet.
  • Add 3 Tbsp sherry and chicken stock and simmer for 10 minutes.
  • Add milk and cheese and stir until cheese is melted and soup begins to thicken.
  • Combine cornstarch and remaining 3 Tbsp of sherry and stir into soup.
  • Continue cooking until soup is thickened.

2 c dry champagne
2 c white wine, dry
1 Tbsp finely chopped shallot
2 chicken bouillon cubes
8 oz brie cheese with the rind left on
1 1/2 qt heavy cream

Steps:

  • 1. Saute the shallots and bouillon in wine
  • 2. Add remaining wine and champagne.
  • 3. Then add the brie and heavy cream
  • 4. Bring to a boil, just until a head forms, then remove from heat and let stand 5 minutes

6 ounces leeks
10 ounces potatoes
2 1/2 pints vegetable stock or 2 1/2 pints chicken stock
8 ounces brie cheese
salt and pepper

  • Peel and dice potatoes.
  • Place potatoes in vegetable stock.
  • Clean and chop leeks and place in stock.
