2 1/2 pounds green beans (stem ends removed), cut into 1-inch lengths
1 can (14.5 ounces) reduced-sodium chicken broth
Coarse salt and ground pepper

Steps:

  • In a 5-quart Dutch oven or heavy pot, cook bacon over medium, until browned, 10 to 12 minutes.
  • Add green beans, broth, and 2 cups water; season with salt and pepper. Bring to a boil; reduce to a simmer, and cook until green beans are very tender, about 1 hour. Season with salt and pepper.

Nutrition Facts : Calories 88 g, Fat 3 g, Fiber 4 g, Protein 6 g

Tips:

  • Soak the Beans Overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. It also helps to remove some of the indigestible sugars, which can cause gas and bloating.
  • Use a Dutch Oven or Heavy-Bottomed Pot: A Dutch oven or heavy-bottomed pot will help to evenly distribute the heat and prevent the beans from burning.
  • Add Aromatics and Spices: Adding aromatics, such as onion, garlic, celery, and carrots, and spices, such as bay leaves, thyme, and black pepper, will help to flavor the beans.
  • Use Good Quality Bacon: The quality of the bacon will make a big difference in the flavor of the dish. Look for thick-cut, smoked bacon.
  • Don't Overcook the Beans: Overcooked beans will be mushy and lose their flavor. Cook the beans until they are tender but still hold their shape.

Conclusion:

St. John's beans and bacon is a hearty, flavorful dish that is perfect for a cold winter day. The beans are creamy and tender, the bacon is crispy and salty, and the sauce is rich and flavorful. This dish is sure to please everyone at your table.
