ST. ANSELM'S GARLIC STEAK

Very simple sounding, but delicious. Also serve the clarified butter sauce on scallops, shrimp, or artichokes. I love it on scallops! Very versatile! You can also sub shallots or rosemary for the garlic. From Bon Appetit. Prep time does not include the time to get your grill ready.

Yield 2 serving(s)

Number Of Ingredients 7

1 (1 1/2 lb) hanger steaks or 1 (1 1/2 lb) flatiron steak
kosher salt
black pepper, freshly ground
1 1/2 tablespoons unsalted butter
1/2 garlic clove, minced
coarse sea salt
flat leaf parsley, chopped

Steps:

  • Build a medium hot fire in a charcoal grill.
  • Season steak generously with kosher salt and black pepper.
  • Melt butter in a small skillet over medium heat until foamy. Remove skillet from heat. To clarify the butter, use a spoon to skim the foam floating on the surface of the butter; discard the foam. Add the garlic to the clarified butter and let it infuse while the steak is cooking and resting.
  • Grill the steak, turning once, until cooked to desired doneness, about 5 minutes per side for medium rare. Transfer steak to a cutting board and let it rest for 10 minutes.
  • Thinly slice the steak against the grain. Divide the steak between plates and spoon the garlic butter over the top of the steaks. Season with sea salt and garnish with parsley if desired.

Yield 2

Number Of Ingredients 8

8 cloves garlic, minced
1 tablespoon olive oil
1 pinch salt and ground black pepper
2 (12 ounce) New York strip steaks
12 cloves garlic, peeled
1 cup olive oil for frying
1 pinch salt and ground black pepper to taste
1 ½ tablespoons balsamic vinegar

Steps:

  • Whisk minced garlic, olive oil, salt, and black pepper in a bowl, then pour into a resealable plastic bag. Add the steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Combine 12 garlic cloves and 1 cup olive oil in a small saucepan over low heat. Cook, stirring occasionally, until garlic is golden and tender, about 30 minutes. Set aside.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from bag, wiping off excess marinade with paper towels. Generously season steaks with salt and black pepper.
  • Cook the steaks on the prepared grill until they start to firm and are reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove steaks to a plate and let rest for 5 minutes.
  • Drizzle balsamic vinegar over steaks, then spoon a few cloves of oil-roasted garlic on top.

Tips:

  • Choose high-quality steak: Opt for a well-marbled steak, such as ribeye or strip steak, to ensure tenderness and flavor.
  • Use fresh garlic: Fresh garlic provides the best flavor and aroma. Avoid pre-minced or jarred garlic.
  • Don't overcrowd the pan: Cooking too many steaks at once will lower the pan's temperature and result in uneven cooking. Cook the steaks in batches if necessary.
  • Let the steaks rest: After cooking, let the steaks rest for a few minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Serve with your favorite sides: St. Anselm's Garlic Steak pairs well with a variety of sides, such as mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

St. Anselm's Garlic Steak is a classic dish that is sure to impress your family and friends. With its tender, flavorful steak and aromatic garlic sauce, this dish is perfect for any special occasion.
