SRIRACHA DIP WITH OVEN FRIED SWEET POTATOES
A few years ago I discovered a creamy Sriracha sauce at PF Changs and duplicated their recipe as best I could. The base of the sauce (Sriracha) is available in most grocery stores in the north east (not sure about other parts of the country), and the rest of the recipe uses items we already have in our fridge. Steps:
- 1. Pre heat oven to 400 degrees. Wash and peel sweet potatoes. I like to leave some of the unblemished skin on. Halve potatoes and slice into wedges. I try and get 12 slices per potato.
- 2. In medium size bowl, mix together canola oil and dry spices. Add sliced potatoes and coat with oil mixture. Place on foil or parchment lined baking sheet and bake 20 minutes. Turn potatoes over and cook another 15 minutes or until potatoes are cooked.
- 3. While potatoes are cooking, prepare the dipping sauce. Combine all ingredients (from mayo to horseradish) and when potatoes are done, get ready to dip away.

- Bake fries, turning once and rotating pans once, until edges are lightly browned and centers are tender; 15 to 20 minutes.
- To make sriracha dipping sauce:

Tips:
- Use a variety of sweet potatoes. This will give your dish a more complex flavor and texture. If you can find them, look for Garnet, Beauregard, and Jewel sweet potatoes. These varieties have a more intense flavor than the common orange sweet potato.
- Don't overcrowd the sweet potatoes on the baking sheet. This will prevent them from cooking evenly. Leave at least 1/2 inch of space between each sweet potato.
- Don't overcook the sweet potatoes. They should be tender, but still slightly firm in the center. Overcooked sweet potatoes will be mushy and bland.
- Use a good quality sriracha sauce. The flavor of the sriracha sauce will make or break this dish. Look for a sauce that is spicy, but not too vinegary.
- Serve the sriracha dip immediately. This is when it will be at its best. The dip can be made ahead of time, but it should be reheated before serving.
Conclusion:
This sriracha dip with oven-fried sweet potatoes is a delicious and easy appetizer or snack. It's perfect for parties or potlucks. The sweet potatoes are crispy on the outside and tender on the inside, and the sriracha dip is spicy, creamy, and addictive. Give this recipe a try next time you're looking for something new to serve your guests. They're sure to love it!
