SPAGHETTI SQUASH I

Spaghetti Squash I image

The flesh of spaghetti squash comes out in long strands, very much resembling the noodles for which it is named. In this recipe, the 'noodles' are tossed with vegetables and feta cheese. You can substitute different vegetables, but be sure to use ones that have contrasting colors.

Time 45m

Yield 6

Number Of Ingredients 8

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 ½ cups chopped tomatoes
¾ cup crumbled feta cheese
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Place spaghetti squash with cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven and set aside to cool enough to be easily handled.
  • Meanwhile, heat oil in a skillet over medium heat. Cook and stir onion in oil until tender. Add garlic; cook and stir until fragrant, 2 to 3 minutes. Stir in tomatoes and cook until tomatoes are warmed through.
  • Use a large spoon to scoop the stringy pulp from the squash and place in a medium bowl. Toss with the vegetables, feta cheese, olives, and basil. Serve warm.

SPAGHETTI SQUASH WITH TOMATO, BASIL, & FETA

Spaghetti Squash with Tomato, Basil, & Feta image

Roasted Spaghetti Squash with Tomato, Basil, & Feta is a healthy and satisfying side dish that complements any meal.

Provided by Judy Purcell

Categories     Side Dish

Time 1h10m

Number Of Ingredients 6

2 cups spaghetti squash (, about 2 pounds)
2 cloves garlic (, minced)
1/3 cup chopped fresh basil leaves
1 1/2 cups tomatoes (, seeded and diced (2-3 medium tomatoes))
1/2 cup crumbled feta cheese
4 tablespoons extra-virgin olive oil

Steps:

  • Using a sharp knife cut the squash in half from stem to bottom. (If too hard to cut, microwave for 3-5 minutes to soften first.) Scoop out seeds and discard (or see note for using the seeds). Place the two halves face down in a casserole dish or on a rimmed baking sheet. Reserve one of the shell halves to serve in, if desired.
  • Bake at 400° for 50-60 minutes (this will depend on the size of the squash). When done, the outer skin will be soft enough for a fork to easily penetrate.
  • Prep the remaining ingredients, as the rest of the dish will come together quickly.
  • Once the squash is tender, remove from the oven and set aside to cool enough to handle, turn squash face up and use a fork to separate the strands. Set aside until ready to toss with the other ingredients.
  • Heat 2 tablespoons of olive oil in a skillet over med-low heat, add garlic, and cook 2-3 minutes until fragrant. Add spaghetti squash to the skillet and stir to incorporate the garlic and warm the squash.
  • Add tomato, basil, and feta; toss to combine. Remove from heat and drizzle with an additional 2 tablespoons of olive oil. Serve immediately or cover until ready to serve.

PAN-COOKED SUMMER SQUASH WITH TOMATOES AND BASIL

Pan-Cooked Summer Squash With Tomatoes and Basil image

This Provençal summer dish is delightful as a starter or as a side dish with fish, chicken or cooked grains.

Provided by Martha Rose Shulman

Categories     weekday, side dish

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 7

2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced
1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
  • Add the remaining olive oil to the pan, then the garlic. Cook, stirring, just until fragrant -- less than 30 seconds. Stir in the tomatoes. Cook, stirring, until the tomatoes have begun to cook down, about five minutes. Return the zucchini to the pan, add salt and pepper to taste, and reduce the heat to medium. Cook, stirring often, until the zucchini is tender and translucent and the tomatoes have cooked down to a fragrant sauce. Stir in the basil, and taste and adjust seasonings. Remove from the heat and serve hot, or allow to cool and serve at room temperature.

Tips:

  • Choose the right squash: Use firm, ripe squash with deep, even color and no blemishes.
  • Cut the squash evenly: Cut the squash into uniform pieces so they cook evenly.
  • Don't overcrowd the pan: Cook the squash in batches if necessary to avoid overcrowding the pan. This will help the squash brown and caramelize properly.
  • Season the squash well: Season the squash with salt, pepper, and other spices to taste. You can also add herbs, such as thyme or rosemary, for extra flavor.
  • Roast the squash until tender: Roast the squash until it is tender when pierced with a fork. The cooking time will vary depending on the type of squash and the size of the pieces.
  • Add the tomatoes and feta cheese: Add the tomatoes and feta cheese to the roasted squash and stir to combine. Heat until the tomatoes are softened and the feta cheese is melted.
  • Serve immediately: Serve the squash with tomato and feta cheese immediately. It can be enjoyed as a side dish or main course.

Conclusion:

This squash with tomato and feta cheese recipe is a delicious and easy way to enjoy this versatile vegetable. The roasted squash is tender and flavorful, and the tomatoes and feta cheese add a pop of color and flavor. This dish is perfect for a weeknight dinner or a casual lunch. It is also a great way to use up leftover squash.
