Tips for Making the Best Squash Stuffed Chicken Breasts
- Choose the right squash. Butternut squash is a good choice because it is flavorful and has a firm texture that can hold its shape when stuffed. You can also use acorn squash or kabocha squash.
- Cook the squash until it is tender but not mushy. You can roast the squash in the oven or microwave it. If you are roasting the squash, cut it in half lengthwise and scoop out the seeds. Drizzle the squash with olive oil and season it with salt and pepper. Roast the squash at 400 degrees Fahrenheit for 20-30 minutes, or until it is tender.
- Don't overstuff the chicken breasts. If you overstuff them, the squash will spill out and the chicken will not cook evenly. Use about 1/2 cup of squash filling per chicken breast.
- Bake the chicken breasts at a high temperature. This will help to seal in the juices and prevent the chicken from drying out. Bake the chicken breasts at 400 degrees Fahrenheit for 20-25 minutes, or until they are cooked through.
- Let the chicken breasts rest before serving. This will help the juices to redistribute throughout the chicken and make it more tender.
