1 cup diced white onion
1 garlic clove
1 jalapeno, quartered (seeded, if desired)
1 cup water
Coarse salt and ground pepper
1 tablespoon vegetable oil

1 teaspoon white vinegar
Pinch of sugar

Steps:

  • In a medium pot of boiling salted water, cook tomatillos until tender, 10 to 15 minutes. Drain tomatillos and transfer to a blender; add onion, clove, jalapeno, and water. Puree until smooth. (Use caution when blending hot liquids: Remove cap from lid and cover opening with a dish towel.) Season with salt and pepper. In pot, heat oil over high until shimmering. Lightness is not an attribute usually associated with enchiladas, the most comforting of Mexican tortilla foods. But these enchiladas, filled with a mix of blanched seasoned chard and succulent diced chayote and covered with a classic cooked tomatillo salsa, are both light and incredibly satisfying.

1 pound Swiss or rainbow chard, or a combination
2 medium-size chayote or summer squash (about 1 1/4 pounds), cut in small dice (4 cups diced)
1 pound fresh tomatillos, husked and rinsed
2 jalapeño or 2 to 3 serrano chiles, stemmed
1/2 white onion, coarsely chopped
Salt to taste
4 large peeled garlic cloves; 2 whole and 2 minced
12 cilantro sprigs, plus chopped cilantro for garnish
1 tablespoon canola or grapeseed oil, plus 1/3 cup for frying
2 1/2 cups chicken or vegetable stock
2 tablespoons extra-virgin olive oil
1 teaspoon Mexican oregano
Black pepper
18 corn tortillas
About 1/2 cup crumbled queso fresco or feta

Steps:

  • Strip chard leaves from stems and wash in 2 changes of water. Rinse stems and cut in small dice if wide, or, if thin, slice crosswise 1/4 inch thick. Set aside stems with chayote in one bowl and leaves in another.
  • Make the salsa verde: Combine tomatillos, jalapeños and onion in a medium saucepan; cover with water and bring to a boil. Reduce heat and simmer 10 minutes, until tomatillos have gone from pale green to olive and have softened. Using a slotted spoon, transfer tomatillos, onion and one of the jalapeños to a blender. Do not drain water from pot. Let vegetables cool in blender while you blanch greens and chayote.
  • Add more water to the pot so it is about 2/3 full. Return to a boil, salt generously, and add leaves. Blanch until tender, 1 to 2 minutes. Transfer leaves to a bowl of cold water to quickly shock, then drain and dry. Chop coarsely and set aside.
  • Return water to a simmer and add chayote and chard stems. Simmer 5 minutes, or until just tender. Drain through a colander and again on paper towels.
  • Add whole garlic cloves and cilantro sprigs to ingredients in blender and blend until smooth. Taste for heat and add remaining jalapeño if desired.
  • Heat 1 tablespoon canola oil in a large, heavy saucepan over medium-high heat. When hot, add tomatillo purée and partly cover to protect from splattering. Cook, stirring often, until it thickens and begins to stick to the pan, about 5 minutes.
  • Stir in stock, add salt to taste, and bring to a simmer. Cook uncovered for 20 minutes, stirring often, until sauce is thick and coats the front and back of a spoon. Taste and adjust seasoning.
  • Heat olive oil in medium skillet over medium heat and add minced garlic. When fragrant, after about 30 seconds, stir in oregano, blanched leaves, stems and chayote. Cook, stirring for about 3 minutes, until tender, fragrant and coated with oil. Season with salt and pepper. Stir in 1 cup salsa verde and set aside.
  • Prepare the tortillas: Heat 1/3 cup canola oil in a medium skillet over medium heat, until oil bubbles around the edges of a tortilla when you dip it into the pan. Place a platter covered with paper towels next to pan. Using tongs, slide tortillas, one at a time, into hot oil. As soon as tortilla begins to puff, about 10 to 15 seconds, flip over and leave another 10 to 15 seconds. Immediately remove from pan and drain on paper towels. Cover with foil to keep warm.
  • One by one, quickly dip tortillas into the remaining warm salsa verde, lay on serving platter, and top with about 1/4 cup filling. Roll up tortilla and place seam side down on platter. When all tortillas have been filled, pour remaining salsa verde on top, sprinkle with cilantro and queso fresco and serve.

2 1/2 lb butternut squash, halved
2 tbsp olive oil
1/4 cup chopped onion
1 tbsp minced garlic
1 cup frozen corn kernels
1/2 cup black beans
12 6 inch corn tortillas
1 1/2 cups crumbled feta (8 oz)
1 1/2 cups jack cheese (8 oz)
12 6 inch corn tortillas
1/3 cup chopped green onion tops
16 oz tomatillo sauce or picante sauce
1/2 cup canned chicken broth
Garnishes
sour cream
20 small chopped black olives
1/2 cup cilantro chopped
1/2 cup chopped green onion tops

Steps:

  • Set oven at 400. Cut butternut squash in half and remove seeds. Butter cut side and place in baking pan. Bake about 45 minutes until soft. Cool and spoon cooked squash into bowl. Discard skin. This may be done in advance. Heat oil in a heavy large skillet. Add onion and garlic. Saute on low until very soft. Mix squash, corn and beans into onion mixture. Season with salt and pepper. Warm tortillas in microwave until soft. Place 1 heaping tablespoon of squash mixture into each tortilla. Top with a tablespoon of crumbled feta and roll. Place fold side down in a 9 X 11 greased baking pan. Mix tomatillo sauce with chicken broth to thin it if needed. When the pan is full top enchiladas with tomatillo sauce (or picante sauce). Spread the Jack cheese on top and place in a 350 degree preheated oven for about 20 minutes or until enchiladas are hot. Top each serving with cilantro, green onions, sour cream and chopped black olives.

You can use tomatillo sauce off the shelf, but I don't think it's as good then. This can be frozen after assembly for use later and is worth the time required to make it.

1 lb tomatillo
2 1/2 cups chicken stock or 2 1/2 cups broth
1/2 cup cilantro, chopped
1/2 cup green onion, chopped
1 jalapeno, sliced
1 tablespoon sugar
1/2 teaspoon black pepper
1/3 cup butter
4 tablespoons flour
1 medium butternut squash (2 pounds)
1 tablespoon olive oil
1 garlic clove, minced
1/4 cup yellow onion, diced
1/2 cup fresh corn, uncooked (frozen okay)
3 cups monterey jack cheese, grated
1 dozen corn tortilla

Steps:

  • TO PREPARE THE SAUCE:.
  • Peel the outer skins off tomatillos and blanch in boiling water for 4-5 minutes.
  • Place tomatillos in a food processor along with chicken stock, cilantro, green onion, jalapeno and puree (you may need to divide this to fit in your processor).
  • Transfer to saute pan and simmer over med-low heat.
  • Stir in sugar and pepper.
  • In a small saucepan melt the butter and whisk in the flour to make a roux.
  • Add roux to sauce for desired thickness, salt to taste.
  • Set aside.
  • TO PREPARE THE SQUASH FILLING:.
  • Preheat oven to 400 degrees.
  • Cut squash in half lengthwise to clean out seeds.
  • Place in small baking dish cut side up in one half inch of water and cook until soft (40-50 min).
  • Let cool and spoon out meat (can be done a day ahead).
  • Heat olive oil in a large saute pan over medium heat. Add garlic, onions and saute 2-3 minute until translucent.
  • Mix in squash and corn and set aside.
  • TO ASSEMBLE ENCHILADAS:.
  • Quickly dip the tortillas in some of the enchilada sauce to soften them.
  • Place a spoon or two of the squash mixture on a tortilla along with some cheese and roll up.
  • Repeat, placing enchiladas side by side until baking dish is full.
  • Top enchiladas with sauce and a little cheese.
  • Bake at 350 degrees for 15-20 minutes.

1 cup (1/2" pieces) zucchini
1/2 teaspoon ground coriander

1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 (16-ounce) jars store-bought tomatillo salsa or 4 cups homemade tomatillo salsa, divided
2 cups shredded cooked chicken (from 1/2 [2 1/2-pound] rotisserie chicken)
8 (5-6") corn tortillas
3/4 cup grated Monterey Jack cheese
Sour cream, 1 sliced avocado, cilantro leaves with tender stems, and lime wedges (for serving)

Steps:

  • Heat oil in a 12" (preferably cast-iron) skillet over medium-high. Add onion and cook, stirring, until it starts to soften, about 2 minutes. Add zucchini, coriander, cumin, salt, and pepper. Cook, stirring, until onion and zucchini are softened and lightly browned, about 3 minutes. Stir 1 1/2 cups salsa, scraping up any brown bits from the pan. Fold in the chicken and cook until warmed through, about 1 minute. Transfer enchilada filling to a medium bowl; set skillet aside (do not wipe out).
