BUTTERNUT SQUASH & SWEET POTATO SOUP

Butternut Squash & Sweet Potato Soup image

This easy-to-make butternut squash soup with sweet potatoes, apples, and warm spices tastes like fall in a bowl.

Provided by Jennifer Segal

Categories     Soups

Yield 6-8

Number Of Ingredients 13

3 tablespoons unsalted butter
2 cups roughly chopped yellow onions
2 pounds pre-cut butternut squash
2 medium sweet potatoes, peeled and cut into 1-inch chunks (about 1½ pounds before peeling)
8 cups chicken broth
1½ teaspoons salt
½ teaspoon ground black pepper
1 tart yet sweet apple, such as Fuji or Honeycrisp, cored, peeled and cut into ½-inch pieces
3 tablespoons honey
½ teaspoon ground cinnamon
¼ teaspoon ground mace
⅛ teaspoon ground nutmeg
1 cup heavy cream

Steps:

  • Melt the butter over medium heat in a large pot. Add the onions and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Add the butternut squash, sweet potatoes, chicken broth, salt, and pepper to the pot. Bring to a boil, then cover and reduce the heat to low; simmer until vegetables are very tender, about 15 minutes. Turn off the heat. Add the diced apple and honey and purée the soup with a handheld immersion blender until very smooth and creamy. (Alternatively, use a standard blender to purée soup in batches, being careful not to fill the jar more than halfway. Leave the hole in the lid open and loosely cover with a dish towel to allow the heat to escape. Pour the blended soup into a clean pot.)
  • Stir in the cinnamon, mace, nutmeg, and heavy cream. Bring to a simmer, then taste and adjust the seasoning if necessary. To thicken the soup, simmer over low heat until desired consistency is reached.
  • Note: This soup thickens as it cools. If necessary, add a bit of water to thin it back to desired consistency.
  • Freezer-Friendly Instructions: The soup can be frozen for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot. (The soup will thicken up while in the freezer. While reheating, add a bit of water if necessary to thin it to your desired consistency.)

SWEET POTATO SQUASH CASSEROLE

Provided by WI Cheesehead

Categories     Yam/Sweet Potato

Time 1h40m

Yield 6 serving(s)

Number Of Ingredients 5

2 large sweet potatoes
1 butternut squash
1 cup orange juice
1 tablespoon unsalted margarine or 1 tablespoon unsalted butter
2 cinnamon sticks

Steps:

  • Preheat oven to 375° and cut the sweet potatoes in half.
  • Cut the butternut squash in half vertically and scrape out the seeds.
  • Put the vegetables, cut side up, in a baking pan and bake, uncovered, until they are very soft, at least 1 1/2 hours.

  • Put the orange juice, margarine, and cinnamon sticks in a small saucepan and heat, reducing until it is about 1/4 cup syrup.
  • Discard cinnamon sticks and stir orange syrup into the mashed vegetables.

Tips:

  • Choose the Right Squash: For a creamy and flavorful soup, opt for sweet and flavorful varieties like butternut squash, kabocha squash, or delicata squash.
  • Roast the Squash and Sweet Potatoes: Roasting intensifies their natural sweetness and caramelizes their edges, adding depth of flavor to the soup.
  • Use a Good-Quality Vegetable Broth: A flavorful broth forms the base of the soup, so choose a high-quality, low-sodium broth.
  • Add Aromatics: Onion, garlic, and ginger add a savory base to the soup. Sauté them gently to release their flavors without burning.
  • Use Fresh Herbs: Fresh herbs like thyme, oregano, or rosemary add a vibrant touch of flavor. Stir them in towards the end of cooking to preserve their delicate aromas.
  • Make the Chipotle Sauce in Advance: The chipotle sauce can be made ahead of time and stored in the refrigerator for up to a week. This saves time and allows the flavors to meld.
  • Adjust the Thickness: If you prefer a thicker soup, purée some of the soup in a blender and then stir it back into the pot.
  • Serve with Toppings: Top the soup with a dollop of sour cream, crumbled cotija cheese, chopped cilantro, or a drizzle of olive oil for an extra layer of flavor and texture.
