ROASTED SQUASH VEGETABLE MEDLEY

Steps:
- Preheat oven to 425°F.
- Combing zucchini, yellow squash, onions, and mushrooms in a large bowl.
- Add oil to bowl.
- Toss veggies until all are coated with the oil.
- Combine the seasonings and sprinkle evenly over the veggies.
- Toss again to combine the seasoning and then spread them in a shallow baking pan.
- Place in a hot oven and roast 20 to 25 minutes or until tender.
- Times may vary due to oven temps.
- Toss the veggies with tongs about halfway through the cooking time.
Tips:
- Choose the right squash: For this recipe, butternut squash or kabocha squash are good choices. They have a firm texture that holds up well to roasting.
- Roast the squash and mushrooms separately: This helps to ensure that both vegetables cook evenly. If you roast them together, the mushrooms may release too much liquid and the squash may not get as crispy.
- Use a flavorful blend of spices: A combination of cumin, chili powder, and paprika adds a nice depth of flavor to the dish. You can also add other spices to taste, such as garlic powder, onion powder, or cayenne pepper.
- Don't overcrowd the pan: When roasting the vegetables, spread them out in a single layer so that they have plenty of room to cook. If you overcrowd the pan, the vegetables will steam instead of roast.
- Roast the vegetables until they are tender: The squash should be fork-tender and the mushrooms should be slightly browned. The cooking time will vary depending on the size of the vegetables, so check them often.
Conclusion:
This squash and mushroom medley is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. The roasted vegetables are flavorful and satisfying, and the balsamic vinegar adds a nice finishing touch. Serve this dish as a side dish with grilled chicken or fish, or as a vegetarian main course.
