5 pounds uncooked bow tie pasta
1 pound carrots, shredded
1 package (16 ounces) frozen peas, thawed
10 celery ribs, diced
1 small onion, finely chopped
5 cups mayonnaise
4 cups sweetened condensed milk
2-1/2 cups sugar
3/4 cup cider vinegar
3/4 cup buttermilk
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain. In three large bowls, combine the pasta, carrots, peas, celery and onion. , In another large bowl, combine the remaining ingredients. Stir a third of the dressing into each bowl of pasta mixture. Cover and refrigerate until chilled.

1 pound baby peas (thawed)
1 pound bacon (fried or baked 'til crisp, drained on paper towels, and crumbled)
1/2 of a red onion (peeled and finely chopped)
3 hard boiled eggs (roughly chopped)
3/4 cup coarsely shredded sharp cheddar cheese
3/4 cup mayonnaise
3 tablespoons dill pickle brine or vinegar
1 pound medium shell pasta (cooked firm according to package instructions, then drained and rinsed thoroughly with cold water)

Steps:

  • In a large mixing bowl, gently stir together the peas, bacon, red onion, hard-boiled eggs, cheese, mayonnaise, and pickle brine or vinegar until evenly combined. Gently toss in the cooked pasta until everything is evenly distributed. Serve immediately, or (preferably) put in a tupperware, Gladware, or other tightly covered container in the refrigerator to give the flavours a chance to meld for an hour but up to three days prior to serving. Give it a gentle stir from top to bottom before serving.If the pasta soaks up the dressing and it seems a bit dry, stir in a little extra mayonnaise or add ranch dressing, 1 tablespoon at a time until the dressing reaches desired consistency.

1 cup mayonnaise

1/3 cup extra-virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon honey
1 clove garlic, grated
1 lemon, zested and juiced
Salt and freshly cracked black pepper
12 ounces cavatappi pasta, cooked to package instructions and shocked under cold water
4 ounces asparagus, blanched and thinly sliced on the bias
1 box frozen peas, defrosted
One 12-ounce jar roasted yellow peppers, chopped
1 pint grape tomatoes, halved
1 shallot, minced
1/2 cup fresh dill, chopped
Ricotta salata, for garnish

Steps:

  • For the dressing: In a small bowl, whisk together the olive oil, Dijon mustard, honey, garlic, lemon zest and juice, and season with salt and pepper.
