Time 25m

Yield 4 serving(s)

Number Of Ingredients 15

1/4 cup white balsamic vinegar
1 teaspoon honey
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh tarragon, chopped
1 tablespoon fresh chives, chopped
1 garlic clove, minced
1 small shallot, minced
1/4 cup olive oil
8 cups fresh Baby Spinach
1 cup fresh raspberry
2 medium oranges, peeled and sectioned
1 red bell pepper, sliced
1 medium carrot, sliced thin
1/4 cup sunflower seeds, toasted

Steps:

  • Combine vinegar, honey, herbs, garlic and shallot. Slowly whisk in oil to emulsify. In a large bowl, toss spinach with 2 T. vinegarette, add more to taste. Toss with remaining ingredients and serve.
  • If you are using raw sunflower seeds, simply spread them on a cookie sheet, and toast at 350 for 4 minutes until fragrant. Let cool before adding to salad.

### Tips
  • When selecting spinach, choose young, tender leaves with a deep green color and no signs of wilting or yellowing.
  • Wash spinach thoroughly before use to remove any dirt or debris.
  • To remove excess water from spinach, use a salad spinner or pat dry with paper towels.
  • Fresh strawberries should be ripe, plump, and have a deep red color. Avoid berries that are bruised or have soft spots.
  • Use a variety of nuts and seeds for added texture and flavor. Some good options include almonds, walnuts, pecans, sunflower seeds, and pumpkin seeds.
  • Feta cheese adds a salty, tangy flavor to the salad. If you don't have feta cheese on hand, you can substitute another type of cheese, such as goat cheese or blue cheese.
  • A light vinaigrette dressing is a good choice for this salad. You can use a store-bought vinaigrette or make your own using olive oil, vinegar, Dijon mustard, salt, and pepper.
  • Serve the salad immediately after dressing it to prevent the spinach from wilting.
### Conclusion This spring spinach salad is a delicious and refreshing way to enjoy the flavors of spring. With its combination of fresh spinach, strawberries, nuts, seeds, and cheese, this salad is packed with nutrients and flavor. It's perfect for a light lunch or dinner, or as a side dish at a potluck or barbecue.
