SPRING GREEN SALAD WITH PARSLEY & BLUE CHEESE

Spring green salad with parsley & blue cheese image

Serve this vibrant salad with blue cheese as a light supper or side dish. Kale or chard will also work in place of the spring greens

Provided by Samuel Goldsmith

Categories     Buffet, Lunch, Side dish

Time 20m

Number Of Ingredients 9

300g baby leaf spring greens, any tough stalks removed, leaves finely sliced
½ large bunch of parsley, chopped
250g ready-cooked quinoa
1 small red onion, finely sliced
100g blue cheese, crumbled (ensure vegetarian if needed)
1 lemon, zested and juiced
1 tsp Dijon mustard
1 tbsp rapeseed oil
35g walnuts, roughly chopped (optional)

Steps:

  • Put the kettle on to boil. Tip the spring greens into a large heatproof bowl and cover with boiling water from the kettle, then leave to stand for 2 mins to soften slightly. Drain well, then tip onto a plate lined with kitchen paper. Spread the greens out in a single layer so the paper can absorb as much of the excess water as possible. Leave to cool for 2 mins.
  • Meanwhile, toss the parsley, quinoa and red onions together. Mix in the spring greens, then scatter over the cheese and toss gently with your hands to combine.
  • Whisk the lemon zest and juice, the mustard and rapeseed oil together in a jug to make a dressing. Pour this over the spring green salad and toss gently to combine. Tip the salad onto a large serving platter or spoon into individual bowls and scatter over the walnuts, if using. Serve immediately.

MIXED GREENS WITH BLUE CHEESE DRESSING

Mixed Greens with Blue Cheese Dressing image

I like to make this dish with whatever greens are in season. In spring, I use tender young greens from my garden, including spinach and Bibb lettuce. This salad is our favorite to serve with a baked chicken casserole. It's also perfect for potlucks-just toss the dressing with vegetables right before serving.

Tips:

  • Use fresh, seasonal ingredients: Spring is the perfect time to find fresh, flavorful produce at your local farmers market or grocery store. Look for tender greens like arugula, spinach, and watercress, as well as crisp vegetables like radishes, cucumbers, and asparagus.
  • Don't be afraid to mix and match greens: A variety of greens will give your salad more flavor and texture. Try combining hearty greens like kale or collards with more delicate greens like arugula or spinach.
  • Add some protein: Lean protein like grilled chicken or tofu can help to make your salad more filling and satisfying. You can also add nuts, seeds, or beans for a plant-based protein boost.
  • Choose a flavorful dressing: A good dressing can really make or break a salad. Look for dressings that are made with fresh herbs, citrus, or vinegar. You can also make your own dressing at home with a few simple ingredients.
  • Serve your salad immediately: Salads are best enjoyed fresh. If you need to make your salad ahead of time, store the dressing separately and add it just before serving.

Conclusion:

Spring green salads are a delicious and refreshing way to celebrate the season. With a variety of greens, vegetables, and proteins to choose from, there are endless possibilities for creating a salad that you'll love. So next time you're looking for a healthy and satisfying meal, give one of these spring green salads a try. You won't be disappointed!
