This is a high-protein, high-fiber, and low-fat recipe that is very filling. I usually double the recipe so I have plenty of leftovers. The soup freezes well. This soup comes out very thick; if you like a thinner soup, add more water or reduce the barley to 1/2 cup. This soup recipe is very flexible. Adjust amount of veggies and seasonings to your family's taste.

8 cups water
2 pounds chicken thighs, or more to taste
1 ½ cups chopped carrots
1 cup chopped celery (try to include celery leaves)
1 onion, chopped
¾ cup pearl barley
3 bay leaves
1 cube chicken bouillon, or more to taste
1 teaspoon poultry seasoning
1 teaspoon rubbed sage
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper
2 tablespoons lemon juice

Steps:

  • Combine water, chicken thighs, and bay leaves in a large stock pot; bring to a boil, reduce heat to low, place a cover on the pot, and cook at a simmer until the chicken is tender, about 30 minutes.
  • Remove chicken to a cutting board to cool. Remove and discard bones, skin, and fat from chicken. Cut remaining meat into bite-sized pieces.
  • Cool broth until the fat congeals on the surface. Skim and discard fat.
  • Return soup to heat; add carrots, celery, onion, pearl barley, bay leaves, chicken bouillon, poultry seasoning, sage, salt, and black pepper. Bring the soup to a boil, reduce heat to low, place cover on the pot, and simmer until the barley is cooked and the vegetables are tender, 60 to 90 minutes. Stir lemon juice into the soup just before serving.

2 stalks celery, cut into 1/2-inch pieces
1 large leek (white and light green parts only), thinly sliced and rinsed
1/2 small head Savoy cabbage, chopped
2 teaspoons paprika, plus more for topping
Kosher salt and freshly ground pepper
4 cups low-sodium chicken broth
2 1/2 cups chopped rotisserie chicken (skin discarded)
1/2 cup quick-cooking barley
1/4 cup sour cream
2 tablespoons chopped fresh dill

4 carrots, diced small
4 celery stalks, diced small
1 medium yellow onion, diced small
2 boneless, skinless chicken breasts, cut into 1/2-inch pieces

1 cup quick-cooking barley

Steps:

1 bay leaf
1 small onion, chopped

3 long strips lemon zest
4 bone-in chicken breast halves, skin removed (2 1/2 to 3 pounds)
4 cups chicken broth, low-sodium canned or homemade
1 bunch medium asparagus, thick ends trimmed, cut into 1-inch segments
1/3 cup fresh or frozen peas
5 medium shiitake mushrooms, stemmed and sliced

Steps:

  • Tie the parsley, tarragon, and thyme sprigs and bay leaf together with kitchen twine and put in a large saucepan with the onion, carrot, celery, lemon zest, and chicken breasts. Cover with the broth, bring just to a boil over high heat, skim off any foam that comes to the surface. Adjust the heat to very low and cover. I recently purchased some barley as a way to introduce new grains to my diet. Found lots of good ideas for barley on this site and came up with my own soup. Perfect fall soup with comfort from the barley and chicken with a little heat from the chilies. Since the ingredients here reflect my pantry and tastes, you should feel free to adapt it to your own. I can see using green beans instead of zucchini or thighs instead of breasts.

1 medium yellow onion, diced
2 stalks celery, sliced
2 garlic cloves, minced
1/2 green pepper, diced
1 tablespoon olive oil
7 cups water
2 low-sodium chicken bouillon cubes
2 chicken breast halves, skin removed
1 1/2 cups canned diced tomatoes
1 ear of corn
1 (14 ounce) can black beans
2 ancho chilies
1/2 teaspoon black pepper
1 cup barley
1 medium yellow zucchini or 1 medium green zucchini, cut in to medium cubes

Steps:

  • Saute onion, garlic, celery and green pepper in olive oil in soup pot.
  • Once onions are soft (about 5 minutes) add water, bouillon, tomatoes, black beans and chicken to pot and bring to a low simmer.
  • (Use chicken broth instead of water and bouillon if you prefer).
  • Remove corn kernels from cob and add to soup.
  • Add whole ancho chilies to pot for a minute, just to get the dried chili to soften a bit.
  • Remove from pot.
  • Tear off stalk and remove seeds.
  • Dice chilies into small pieces and return to simmering pot.
  • Let soup simmer 20 minutes and remove chicken from pot.
  • Shred or dice chicken and return to pot.
  • Add barley and let soup simmer for 25 minutes.
  • Add zucchini and let simmer an additional 25 minutes.

3 chicken drumsticks and 1 whole bone-in chicken breast, split, skin removed
1 medium onion, quartered
8 garlic cloves, peeled (4 left whole and 4 very thinly sliced)
2 bay leaves
6 sprigs fresh thyme
12 sprigs fresh flat-leaf parsley, plus 2 teaspoons coarsely chopped
1/2 teaspoon whole black peppercorns
2 medium carrots, cut into 4-inch pieces
2 celery stalks, cut into 4-inch pieces
1 cup pearl barley
1 1/2 teaspoon coarse salt
2 teaspoon grated lemon zest
2 teaspoon olive oil

Steps:

  • Bring water, chicken, onion, whole garlic cloves, bay leaves, thyme and parsley sprigs, peppercorns, carrots, and celery to a boil in a pot, skimming foam from surface as necessary. Reduce heat, and gently simmer until broth turns deep gold, about 1 1/2 hours. Let cool, then skim fat from surface.
  • Meanwhile, cook barley according topackage instructions.
  • Strain stock, reserving chicken breastsand discarding all other solids. Removemeat from bone, and shred into 2-inchpieces. Reheat stock and chicken in asaucepan, and stir in salt.
  • Just before serving, finely chop remainingparsley with the lemon zest untilcombined. Heat oil in a skillet overmedium-high heat. Add sliced garlic,and cook, stirring, until fragrant but notbrowned, about 30 seconds.
  • Divide barley, stock, and chickenamong 6 bowls. Garnish with sliced garlicand parsley-lemon mixture.

1 (1-inch) piece fresh ginger, peeled and finely grated (about 1 tablespoon)

Steps:

  • In a large pot or Dutch oven, add the oil and garlic, and heat over medium. Cook, stirring, until fragrant and softened but not browned, 2 to 4 minutes. Add 6 cups of water, the barley and 2 teaspoons soy sauce. Bring to a boil over high, then reduce heat to medium and simmer until the barley is tender, 25 to 30 minutes.
  • Add the asparagus and peas, and cook until bright green and crisp-tender, 3 to 4 minutes. Remove pot from heat.
  • In a small bowl or liquid measuring cup, stir a spoonful of the soup into the miso until dissolved. Pour into the pot, along with the rice vinegar, ginger and remaining 1 teaspoon soy sauce; stir to combine. Taste for salt level and adjust with more soy sauce. (Leftovers will keep for up to 2 days; rewarm over low heat, thin with water, and add vinegar and soy sauce to taste.)
