1-1/2 cups fat-free milk, divided

1/3 cup yellow cornmeal

1 medium onion, finely chopped
1 clove garlic, minced
Kosher salt
2 tablespoons tomato paste
1 1/2 tablespoons chili powder

1 1/2 cups green or red enchilada sauce
1 cup canned black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
1 1/2 cups shredded Monterey Jack cheese
3 cups self-rising cornmeal
2 1/2 to 3 cups buttermilk
2 tablespoons corn oil
4 scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a 10-inch cast-iron skillet over medium-high heat. 3 cups milk
3 cups water
2 teaspoons kosher salt
2 cups stone-ground yellow cornmeal
1 cup grated Parmesan
A few dashes hot sauce
4 large eggs
1/4 cup chopped chives, plus more for garnish

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with 2 tablespoons of the butter.
  • Combine the milk, water, salt and the remaining 4 tablespoons butter in a medium saucepot; bring to a boil. Add the cornmeal in a steady stream while whisking rapidly. Continue stirring until the mixture returns to a simmer. Reduce the heat and simmer, stirring occasionally, until the mixture is very thick, 6 to 10 minutes.
