- In a small saucepan, bring the water, butter and sugar to a boil. , In a small bowl, combine flour and pie spice; add to water mixture all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Preheat oven to 400°. - Preheat oven to 420 degrees F. Thaw puff pastry in refrigerator
- For the filling: Melt butter in a pan. Add the apples and toss so they are covered with the melted butter. Add brown sugar, rum extract, pumpkin pie spice and apple cider. Stir over heat until thick.
