YELLOW SPLIT PEA SOUP WITH CARAMELIZED ONIONS

Yellow Split Pea Soup With Caramelized Onions image

I cut this out of the Vancouver Sun newspaper years ago. The article said they developed it in their test kitchen. It quickly became a family favourite. The caramelization of the onions and carrots takes some time but other than that, it is a breeze to make and very yummy. The pepper doesn't make any heat that we can detect but it might be spicy for some people. Healthy too!

Time 1h50m

Yield 6-8 serving(s)

Number Of Ingredients 11

3 tablespoons olive oil
2 onions, halved lengthwise and sliced
2 large carrots, diced finely
2 garlic cloves, minced
1 tablespoon curry powder
1 tablespoon fresh ginger, minced
1 serrano peppers or 1 jalapeno pepper, seeded and minced
2 cups yellow split peas, rinsed
8 cups broth (I use chicken but ham is good too)
salt and pepper
1/2 cup chopped fresh cilantro (optional)

Steps:

  • Heat oil in a large heavy saucepan over medium heat. Add onions and carrots and cook for about 60 minutes or until golden brown, stirring frequently. Do not let burn. Add the garlic, curry powder, ginger and serrano pepper. Cook five minutes and set aside.
  • In another large pan combine peas and broth. Bring to a boil and simmer for about an hour or until peas are tender.
  • Process in a blender until smooth or use an immersion blender. (I often skip this.).
  • Stir onion mixture into the soup and add salt and pepper to taste. Stir in cilantro if using but I usually don't bother. It's good either way.

Split-Pea Soup with Caramelized Onions and Cuminseed image

Categories     Soup/Stew     Blender     Onion     Quick & Easy     Basil     Pea     Winter     Gourmet

Yield Makes about 4 cups

Number Of Ingredients 8

1 cup dried split peas
1/2 teaspoon dried basil, crumbled
1 bay leaf
2 cups water
2 cups chicken broth
2 cups chopped onion
1/2 teaspoon cuminseed
3 tablespoons olive oil

Steps:

  • In a large heavy saucepan simmer peas, basil, and bay leaf in water and broth, covered partially, until peas are tender, about 35 minutes, and discard bay leaf.
  • While peas are cooking, in a heavy skillet sauté onion and cuminseed in oil over moderately high heat, stirring, until golden brown.
  • In a blender puree soup in batches until just smooth and transfer to a bowl. Stir in onion mixture and salt and pepper to taste.

Tips:

1. **Select high-quality split peas:** Use whole, dried green or yellow split peas for the best texture and flavor. Avoid using split pea flour or canned split peas, as they will not provide the same results. 2. **Rinse the split peas thoroughly:** Rinsing the split peas before cooking removes any dirt or debris and helps them cook evenly. 3. **Use a Dutch oven or large pot:** A Dutch oven or large pot is ideal for making split pea soup, as it provides plenty of room for the soup to simmer and the flavors to develop. 4. **Sauté the aromatics:** Sautéing the onions, garlic, and cumin seeds in butter or olive oil before adding the split peas adds depth of flavor to the soup. 5. **Use a good quality vegetable broth:** The vegetable broth you use will make a big difference in the flavor of the soup. Choose a broth that is low in sodium and has a rich, flavorful taste. 6. **Season to taste:** Season the soup with salt and pepper to taste. You may also want to add additional spices, such as cumin, coriander, or paprika, to taste. 7. **Serve with a variety of toppings:** Split pea soup is delicious served with a variety of toppings, such as croutons, crumbled bacon, grated Parmesan cheese, or a dollop of sour cream.

Conclusion:

Split pea soup is a hearty, flavorful, and nutritious soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With its simple ingredients and delicious flavor, split pea soup is a classic dish that is sure to please everyone at the table.
