1 tablespoon vanilla powder
3/4 teaspoon salt
2 1/2 sticks (1 1/4 cups) unsalted butter, softened
2 teaspoons powdered egg whites

1/2 cup seedless raspberry jam
1/2 cup apricot preserves, strained

Steps:

  • Make cookies:
  • Sift together flour, confectioners sugar, vanilla powder, and salt.

  • Fill cookies:

SPITZBUBEN - A GERMAN HOLIDAY COOKIE

Spitzbuben - A German Holiday Cookie image

After marrying my husband who is 1/3 German I became interested in German culture and recipes. I found this recipe years ago in my local newspaper and tweaked it a bit. These cookies are more work than the average, hence, the "medium" difficulty rating. Yet they are definately worth the extra work and make wonderful Christmas...

Time 25m

Number Of Ingredients 10

3 1/4 c sifted flour
2 1/2 tsp baking powder
1/2 tsp salt
1 1/2 stick unsalted butter
1 1/2 tsp pure vanilla extract
2 1/2 c sugar, divided*
2 eggs
1 Tbsp milk
1 c finely ground pecans (put in coffee grinder)
1 small jar peach jam (or whatever flavor you prefer - seedless raspberry is good too)

Steps:

  • 1. Heat oven to 350.
  • 2. Sift flour, baking powder and salt. Set aside. Mix butter, vanilla, *1 1/2 c. sugar, eggs and milk. Beat well. Add flour mixture and ground nuts. Mix well. Divide dough into 2 - 3 portions. Wrap in plastic and refrigerate several hours.
  • 3. Flour wooden board and rolling pin. Cut w/cookie cutters (I use the small gingerbread man cutters for Christmas)and place on ungreased cookie sheets.
  • 4. Bake approx. 10 min. until VERY lightly browned. DO NOT OVERBAKE. Cool to a warm temp. While still warm spread a cookie with jam, put another cookie on top to make a cookie sandwich and roll in remaining *1 c. sugar. Place on racks to cool. Store in tightly covered plastic container. Cookies are best when eaten the next day.

Tips:

  • Chill the dough well before rolling and baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Use a sharp knife to cut out the cookies. This will help to prevent the dough from tearing.
  • Bake the cookies until the edges are just starting to brown. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before filling them. This will help to prevent the filling from seeping out.
  • Use a piping bag or a zip-top bag with the corner snipped off to fill the cookies. This will help to create a neat and even filling.
  • Dust the cookies with powdered sugar before serving. This will give them a festive and elegant look.

Conclusion:

Spitzbuben are a delicious and festive German holiday cookie that is sure to impress your friends and family. With their delicate shortbread crust and sweet jam filling, these cookies are a perfect treat for any occasion. So next time you're looking for a special cookie to bake, give Spitzbuben a try. You won't be disappointed!
