4 flour tortillas (8 to 10 inch), any flavor
1 cup Roasted Red Pepper Dip*
3 cups lightly packed baby spinach leaves
2 large plum (Roma) tomatoes, thinly sliced
1/2 lb thinly sliced cooked smoked turkey (from deli)

Steps:

  • Spread each tortilla evenly with dip. Arrange spinach leaves evenly over dip to within 1 inch of top edge. Top with single layer of tomato slices. Evenly layer turkey slices over tomatoes.
  • Starting with bottom edge, tightly roll up each tortilla. Wrap rolls individually in plastic wrap. Refrigerate at least 1 hour but no longer than 24 hours.
  • To serve, trim off uneven ends of rolls. Cut rolls into 1-inch slices; arrange on serving platter.

1/4 cup spreadable chive and onion cream cheese
2 flour tortillas (8 inches)
1/4 teaspoon garlic powder
2 cups loosely packed fresh baby spinach
5 ounces thinly sliced deli turkey
1/2 to 1 cup shredded Monterey Jack cheese
3/4 cup julienned sweet red pepper
1/4 cup chopped green onions
2 tablespoons ranch salad dressing

Steps:

  • Spread 2 tablespoons of cream cheese over each tortilla. Sprinkle with garlic powder. Layer each with 3/4 cup spinach, turkey, cheese, red pepper and onions. Top with remaining spinach. , Drizzle with dressing. Roll up tightly jelly-roll style; wrap in plastic. Refrigerate until serving.

1 (8 ounce) container cream cheese with vegetables (i use two per package of tortillas)
1 red bell pepper, cut into thin strips
3 cups lightly packed spinach leaves
1/2 lb thinly sliced cooked turkey (from deli)

Steps:

  • .Spread tortillas evenly with cream cheese. Place 1/4 of the bell peppers evenly over cream cheese on each tortilla. then layer the spinach leaves tp within 1 in of top edge. Evenly layer turkey slices over spinach.
  • Tighly rollup each tortilla from bottom edge.Wrap rolls individually in plastic wrap; Refigerate at least one hour but no longer than 24 hours.Trim uneven ends. Cut rolls into 1-inch slices. Arrange on platter.
