Time 30m

Number Of Ingredients 7

4 hard-boiled eggs,halved
2 oz ricotta cheese, part-skim
2 Tbsp grated parmesan cheese
2 Tbsp cooked spinach,finely chopped
salt and pepper
pinch freshly grated nutmeg
1/2 tsp cayenne pepper

Steps:

  • 1. Remove the yolks from the eggs and put in a small mixing bowl.
  • 2. Add the cheeses and spinach
  • 3. Beat the mixture until it is smooth Season to taste with salt, pepper and nutmeg and then pile back into the egg whites.
  • 4. Sprinkle over the cayenne

Tips:

  • Choose fresh, large eggs: Larger eggs will have more filling capacity, and fresh eggs will be easier to peel.
  • Hard-boil the eggs perfectly: Cook the eggs for 10-12 minutes for a firm yolk, and immediately transfer them to an ice bath to prevent overcooking.
  • Make clean cuts: Use a sharp knife to cut the eggs in half lengthwise, and remove the yolks carefully to avoid breaking the whites.
  • Mash the yolks smoothly: Use a fork or a potato masher to mash the yolks until they are completely smooth and free of lumps.
  • Season the yolk mixture well: Add salt, pepper, mayonnaise, mustard, and any other desired seasonings to taste.
  • Chop the spinach finely: Finely chopped spinach will blend better with the yolk mixture and make it easier to stuff into the egg whites.
  • Use a piping bag or a spoon to stuff the eggs: If you have a piping bag, it will be easier to fill the egg whites evenly. Otherwise, use a small spoon to carefully scoop the filling into the egg whites.
  • Chill the stuffed eggs before serving: This will help the filling to set and make the eggs easier to handle.

Conclusion:

Spinach-stuffed eggs are a delicious, healthy, and versatile appetizer or snack.
