4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar

5 -6 ounces fresh baby spinach leaves
1 quart strawberry, hulled and sliced
1/4 cup red onion, minced
3 bananas
2 lemons, juiced and separated
1/2 cup walnuts, chopped
2 teaspoons toasted sesame seeds
2 teaspoons poppy seeds
3/4 cup canola oil
1/2 cup sugar
1/2 teaspoon mustard powder
1/2 teaspoon paprika
1/2 teaspoon Braggs liquid aminos

Steps:

  • Rinse, soak, drain and dry the spinach.
  • Peel the bananas and cut them into 1/4" slices. Drizzle 1/2 a lemon's worth of lemon juice on the bananas to keep them from turning brown.
  • Add the spinach, strawberries and onions to the salad bowl and mix.
  • Add the bananas and walnuts. Mix again.
  • Sprinkle the sesame seeds and poppy seeds. Mix again and it's ready.
  • If you want to make the dressing, put all of the remaining ingredients into a bowl and emulsify.

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. You can get the spinach (baby spinach is the best) and slice the strawberries with an egg slicer and toss ahead, in the fridge -- but let the dressing sit on the counter, trust me. Then toss immediately before eating. Some time I added candied sliced almonds -- just add almond slices to a frying pan and lightly sugar the almonds, add a few drops of water to this slowly and let it cook for a few minutes. caramelizes to a crisp, sweet. Very hot, be careful. I also added the blue cheese, mentioned by other readers. also.instead of using all that sugar, I substituted some honey for the sugar instead, which helped the dressing stick to the salad. I also halved the sugar and substituted Raspberry Balsamic Vinegar for White Vinegar. Also, left out the seeds(I couldn't find them in the store some times) and used sliced almonds. Delicious.
