I used fresh basil and added a bunch of jalapenos to make it spicier. I also doubled the spinach, but I'll post the recipe as written. Perfect fall soup. Recipe courtesy of www.damndelicious.net

SAUSAGE, POTATO AND SPINACH SOUP

SAUSAGE, POTATO AND SPINACH SOUP image

Categories     Soup/Stew     Potato     Sausage

Number Of Ingredients 6

3 spicy (or lightly spicy) sausages cut into 1 cm pieces
2 medium onions, chopped
2 large garlic cloves, minced
3 large potatoes, cut into 1/2-inch squaress
6 cups chicken broth
1 9-bag fresh spinach

Steps:

  • Heat 2 tablespoons olive oil in heavy large pot over medium-high heat. Add sausage; cook until brown. Transfer sausage to paper towels to drain. Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes. Add potatoes and cook until beginning to soften. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes. Using potato masher, mash some of potatoes in pot. Add browned sausage and spinach. Simmer just until spinach is wilted. Season with salt and pepper

Tips:

  • Prep Your Ingredients: Chop your veggies, dice your sausage, and prepare your broth before you start cooking. This will save you time and make the cooking process smoother.
  • Use Fresh Spinach: Fresh spinach adds a vibrant color and flavor to the soup. If you don't have fresh spinach, you can use frozen spinach, but be sure to thaw it and squeeze out any excess water before adding it to the soup.
  • Cook the Sausage Thoroughly: Make sure the sausage is cooked through before adding it to the soup. This will help prevent the soup from becoming greasy.
  • Season to Taste: Taste the soup as you cook and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder to taste.
  • Serve with Toppings: Serve the soup with your favorite toppings, such as shredded cheese, sour cream, or chopped green onions. This will add extra flavor and texture to the soup.

Conclusion:

This spinach sausage and potato soup is a hearty, flavorful, and easy-to-make meal that is perfect for a cold night.
