6 oz fresh baby spinach ((washed and cleaned))
½ cup greek yogurt
1 large garlic clove (pressed of finely chopped )
¼ tsp salt
1 Tbsp extra virgin olive oil
1 Tbsp fresh chopped dill

Steps:

  • First I go over the spinach and trim the big stems. Then I wash it thoroughly and dry it, by placing it on a towel.
  • Make the dressing by combining the yogurt, garlic, salt, dill and olive oil in a bowl and stir it well.
  • Then drizzle the dressing over the spinach and stir it well.
  • Serve immediately.

1/2 cup chopped red onion

1/8 teaspoon cayenne pepper
Salt and pepper
4 cups baby spinach leaves
Yogurt with Orange Essence, recipe below, optional
2 tablespoons coarsely chopped fresh mint leaves, optional
1/3 cup lowfat plain yogurt
1/4 teaspoon orange zest
2 tablespoons orange juice
1/2 teaspoon honey

Steps:

  • In a medium bowl combine the chickpeas, parsley and onion. In a small bowl whisk together the olive oil, lemon juice, zest, cumin, cayenne pepper, salt and pepper. 8 cups baby spinach leaves, tightly packed
2 cucumbers, peeled and seeded, halved (lengthwise)
1/4 medium red onion, halved (lengthwise)
