I love this salad. The first time I made it the onion was a little too much, so next time I did not add the whole onion-I only used half. Or for a shortcut you could buy your favorite brand of Poppyseed dressing.

SPINACH SALAD WITH STRAWBERRIES

Spinach Salad With Strawberries image

Delicious colorful light salad. I have also served with chicken tenders. Strawberries are my favorite especially when in season, but you can use any fruit desired. It takes a little while to make the spiced pecans, but is well worth it or you can also toast the pecans instead of using spiced version.

SOUTHERN SPINACH SALAD WITH PECANS & STRAWBERRIES

Southern Spinach Salad With Pecans & Strawberries image

This recipe is a variation on several I've been looking at and have decided to combine the ingredients from them into one.

Provided by teknobear

Categories     Strawberry

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

4 cups Baby Spinach
2 cups fresh strawberries, sliced
1/4 cup red onion, thinly sliced
1/2 cup pecan halves
1/2 cup blue cheese, crumbled
3 slices bacon, cooked and crumbled
1/3 cup granulated sugar
1/3 cup red wine vinegar
1 tablespoon water
2 teaspoons cornstarch
1 dash salt

Steps:

  • Toast Pecans - Preheat oven to 350 degrees F (175 degrees C). Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside. Once cooled, coarsely chop half of the pecans, leaving the other whole. These can be stored safely for up to two weeks in an air-tight container, longer in a freezer.
  • For Dressing - In a sauce pan, combine last five ingredients. Bring to a simmer, and simmer for 1 minute. Remove from heat. This can be stored in the fridge for up to 3 months.
  • For Serving Salad - toss the spinach, strawberries, and red onion to mix. Top with pecans, blue cheese and dressing then lightly toss into salad. (If making this in advance, do the final toss right before serving, keeping the pecans and cheese separate).

Tips:

  • Choose fresh, high-quality ingredients: Fresh spinach, ripe strawberries, and crunchy pecans are essential for a delicious salad.
  • Make your own dressing: A homemade dressing is always tastier and healthier than a store-bought one. This recipe uses a simple vinaigrette made with olive oil, balsamic vinegar, honey, and Dijon mustard.
  • Don't overdress the salad: A little dressing goes a long way. Too much dressing will weigh down the salad and make it soggy.
  • Add some protein: If you want a more filling salad, add some grilled chicken, salmon, or tofu.
  • Serve immediately: This salad is best served immediately after it's made. The strawberries will start to lose their color and flavor if they sit for too long.

Conclusion:

This spinach salad with strawberries and pecans is a refreshing, healthy, and delicious salad that's perfect for any occasion. It's packed with nutrients and antioxidants, and it's a great way to get your daily dose of fruits and vegetables. So next time you're looking for a light and healthy meal, give this salad a try. You won't be disappointed!
