Time 20m

Yield 4 1 1/2 cup serving, 4 serving(s)

Number Of Ingredients 12

3 tablespoons minced onions
3 tablespoons peanut oil or 3 tablespoons canola oil
2 tablespoons distilled white vinegar
1 1/2 tablespoons finely grated fresh ginger
1 tablespoon ketchup
1 tablespoon reduced sodium soy sauce
1/4 teaspoon minced garlic
1/4 teaspoon kosher sea salt
fresh ground pepper
10 ounces fresh spinach
1 large carrot, grated
1 medium red bell pepper, very thinly sliced

Steps:

  • Combine onion, oil, vinegar, ginger, ketchup, soy sauce, garlic, salt and pepper in a blender.
  • Process until combined.
  • Toss spinach, carrot and bell pepper with the dressing in a large bowl until evenly coated.
  • Serve.
  • NOTE: You can cover and refrigerate the dressing (Step 1) for up to 5 days.

Tips:

  • Fresh and tender spinach: For the best results, use fresh, young spinach with tender leaves. Avoid wilted or bruised leaves.
  • Homemade dressing: The Japanese ginger dressing is easy to make and adds a delicious, slightly sweet and tangy flavor to the salad. If you don't have time to make the dressing, you can use a store-bought Asian vinaigrette or sesame dressing.
  • Crispy toppings: The toasted sesame seeds and crispy wonton strips add a nice textural contrast to the soft and tender spinach. You can also add other crispy toppings, such as fried shallots or crushed peanuts.
  • Serve immediately: Spinach salad is best served immediately after dressing. If you let it sit for too long, the spinach will wilt and the dressing will become watery.

Conclusion:

This spinach salad with Japanese ginger dressing is a healthy and refreshing side dish or light meal. It's packed with nutrients and has a delicious, slightly sweet and tangy flavor. The crispy toppings add a nice textural contrast to the soft and tender spinach. This salad is sure to be a hit at your next gathering!
