ZESTY SPINACH SALAD DRESSING
Awesome family recipe for spinach salad dressing! Best served in a classic spinach salad with hard-boiled eggs and bacon. Note: When pouring dressing, do not add the cloves of garlic into the salad as they are just used to flavor the dressing.

SESAME-GARLIC SPINACH SALAD
The magic of this easy spinach salad is the warm, garlic-infused dressing, which makes the spinach, carrots, radishes and scallions slightly tender and helps them absorb a bit of the dressing.

SPINACH SALAD WITH ROASTED GARLIC AND BACON DRESSING
This recipe comes from Chef John Currence of the City Grocery Restaurant in Oxford, MS. The dressing for this salad has a wonderful flavor, but I found it too oily as written. I've left the recipe as he wrote it, but I now skip the 3 tablespoons of olive oil, and only add about 1/2 of the oil from the roasted garlic. The flavor is great.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Watch the nuts carefully as they bake, because they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
- Mix together the mayonnaise, milk, and sugar in a large salad bowl. Stir in the bacon bits and Parmesan cheese until the dressing is well combined and creamy.
- Place the spinach leaves, chopped cauliflower, and toasted almonds into the salad bowl, and stir lightly to coat with dressing.

Tips:
- Use fresh, young spinach: Baby spinach or tender salad mix works best for this recipe. Avoid wilted or tough spinach leaves.
- Whisk the dressing thoroughly: Make sure the garlic, lemon juice, olive oil, and honey are well combined to create a smooth and flavorful dressing.
- Don't overdress the salad: A light coating of dressing is all you need to enhance the flavors of the spinach and other ingredients without overpowering them.
- Add the dressing just before serving: This will prevent the spinach from wilting and becoming soggy.
- Feel free to customize the salad: Add other vegetables like sliced mushrooms, cherry tomatoes, or bell peppers for a more colorful and nutritious salad.
Conclusion:
This spinach salad with garlic dressing is a simple yet satisfying dish that's perfect for a light lunch or a healthy side dish. With its fresh, zesty flavors and vibrant colors, this salad is sure to be a hit at your next gathering. The garlic dressing adds a delicious savory touch that complements the sweetness of the cranberries and the crunch of the almonds. Whether you're a spinach lover or just looking for a new way to enjoy your greens, this salad is definitely worth trying.
