4 sliced bacon, diced
1/4 cup mayonnaise
1 1/2 tablespoons catsup
8 slices marbled rye bread, toasted
4 slices swiss cheese
2 hard-boiled eggs, slice thin
2 cups fresh baby spinach leaves, washed, stemmed and thoroughly drained
1 cup white button mushrooms, sliced
salt and pepper, to taste

Steps:

  • Heat a large frying pan over medium heat; add bacon and cook. Stir occasionally until browned and crispy (approximately 4 minutes). Drain on a paper towel-lined plate; set aside.
  • In a small mixing bowl combine the mayonnaise and catsup; stir well.
  • Add the bacon to the mayonnaise mixture; give a good stir. Evenly divide among the bread slices.
  • Top each bread slice with a slice of cheese; arrange even amounts of the egg, spinach, and mushrooms over the cheese slices. Salt and pepper, to taste.
  • Top with remaining bread slices; cut sandwiches in half.
  • A warm mug of tomato soup makes a delicious accompaniment to this sandwich.

Number Of Ingredients 10

16 oz market side italian loaf bread, cut into 8 wedges
12.5 oz can(s) tyson chicken
4 green onions, diced
21/2 Tbsp tosititos spinach dip
salt and pepper to taste
easy spread butter
8 oz brie cheese
5 slices cooked bacon
15 spinach leaves
10 slices thinly cut tomato

Steps:

  • 1. In a small bowl add the chicken, onion, dip, and salt and pepper. Stir to combine. Chill at least 15 minutes for flavors to get happy.
  • 2. Lay sliced bread out. butter one side of each piece. Next spread brie cheese on the other sides of each piece of bread.
  • 3. Divide the chicken mixture up between five slices, putting chicken on cheese side.
  • 4. Break bacon into and lay halves on top of chicken.
  • 5. Next add three spinach leaves to top of bacon, then two tomato slices on each.
  • 6. Top the mixture with the other slices of bread, cheese side down on top of sandwiches.
  • 7. Heat a skillet or indoor grill for stove. Place sandwiches in skillet or grill. Set another heavey iron skillet on top. Cook about 3 to 4 minutes, flip and do the same on other side.
