1 1/2 cups grated Parmesan
1/4 cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon orange juice
1/2 teaspoon lemon zest
1/2 teaspoon orange zest
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

GRILLED CHICKEN SPINACH SALAD WITH FRICO

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 10

2-ounce piece Parmesan
4 ounces button mushrooms
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
4 boneless skinless chicken breasts, (about 6 ounces each)
2 tablespoons extra-virgin olive oil
1/4 cup whole-grain mustard
3 tablespoons chicken broth, homemade or low-sodium canned
2 tablespoons balsamic vinegar
8 cups baby spinach, washed and dried

Steps:

  • Preheat the oven to 350 degrees F.
  • Coarsely grate the cheese. Line a baking sheet with a silpat mat or parchment paper. Sprinkle 1 tablespoon of the cheese on the mat to make a thin disk, about 2 inches wide. Repeat with the remaining cheese, spacing the disks evenly on the pan to make 8 fricos. Bake rotating the pan once during baking, until the cheese melts together and is just golden, about 12 minutes. Cool fricos on the pan.
  • Position a rack 6 inches from the broiler and preheat.
  • Slice the mushrooms as thin as possible. Toss with the lemon juice and season with the salt and pepper, to taste.
  • Brush the chicken breast with olive oil and mustard. Season with the salt and pepper. Place the chicken in a flameproof gratin or casserole dish and broil, turning as needed until an instant-read thermometer inserted into the breasts registers 160 degrees F, about 25 minutes. Transfer the chicken to a plate, reserve the pan. Add the broth to the pan, and stir with a wooden spoon to release the brown bits that cling to the pan. Reserve the pan drippings.
  • Whisk the balsamic vinegar, salt, and pepper, to taste, in a large bowl. Gradually whisk in the oil, and the pan drippings starting with a few drops and then adding the rest in a steady stream, to make a dressing.
  • Slice the chicken. Toss the spinach and mushrooms with the dressing and divide among 4 plates. Scatter the chicken over the salads, top with the fricos and serve.

Spinach Salad with Citrus Vinaigrette image

Categories     Salad     Side     Spinach     Raw

Yield 4 to 6 servings

Number Of Ingredients 17

Citrus Vinaigrette
1/2 cup extra-virgin olive oil
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 teaspoon fresh thyme leaves, chopped
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Spinach Salad
1 (10-ounce) bag of spinach (about 6 cups)
2 oranges, cut into segments (see Note)
1/2 cup sliced almonds, toasted (see page 168)
1/2 red onion, thinly sliced
Salt and freshly ground black pepper
Parmesan Frico (page 229)

Steps:

  • Combine all the ingredients for the Citrus Vinaigrette in a jar or a tight-sealing plastic container. Shake to blend.
  • Combine the spinach, orange segments, almonds, red onion, salt, and pepper in a large bowl. Toss with the Citrus Vinaigrette. Serve on individual plates, topped with 1 or 2 Parmesan Frico.
  • Note
  • To cut orange segments, first use a small sharp knife to cut off the top and bottom of the orange. Stand the orange on one of the cut ends and make long, straight cuts to slice away all of the peel and white pith. Hold the peeled orange in your palm and cut on each side of the membranes to free the segments.

Tips:

  • For the best results, use fresh baby spinach leaves. If using regular spinach, be sure to remove the stems and wash the leaves thoroughly.
  • To make the Parmesan frico cups, use a nonstick skillet over medium heat. Once the Parmesan cheese is melted, use a spatula to spread it out into a thin layer.
  • Let the Parmesan frico cups cool completely before filling them with the spinach salad. This will help them to hold their shape.
  • For the dressing, use a good quality olive oil and balsamic vinegar. You can also add a touch of honey or Dijon mustard for extra flavor.
  • To assemble the salad, simply place a Parmesan frico cup on a plate and fill it with spinach leaves. Drizzle with dressing and top with your favorite toppings.

Conclusion:

Spinach salad in a Parmesan frico cup is a delicious and easy-to-make appetizer or light lunch. The Parmesan frico cups are crispy and flavorful, and the spinach salad is light and refreshing. This recipe is sure to impress your guests and is perfect for any occasion.
