¼ cup extra-virgin olive oil, divided
1 pound pizza dough
2 tablespoons grated Parmesan cheese
1 (8 ounce) package low-fat cream cheese, softened
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup cooked spinach, squeezed dry and finely chopped
½ cup artichoke hearts, drained and chopped
2 teaspoons garlic paste
1 teaspoon red pepper flakes, or to taste
½ teaspoon salt, or to taste
¼ teaspoon fresh ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a round baking dish with 1 tablespoon olive oil.
  • Shape pizza dough into a log and cut into 16 pieces. Roll pieces into balls and place around the edges of the dish. Brush with remaining 3 tablespoons olive oil and sprinkle with 2 tablespoons Parmesan cheese.

1-1/2 cups sour cream
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup chopped green onions
1 can (8 ounces) water chestnuts, drained and chopped
1/2 cup mayonnaise
1 package vegetable soup mix
1/4 cup grated Parmesan cheese
1/4 cup butter, melted
1 teaspoon dill weed
1/4 teaspoon garlic powder
2 tubes (7-1/2 ounces each) refrigerated buttermilk biscuits

Steps:

  • For dip, in a large bowl, combine the first six ingredients. Cover and refrigerate until serving., In a small bowl, combine the cheese, butter, dill and garlic powder. Cut each biscuit in half; arrange half of the pieces in an ungreased 10-in. fluted tube pan. Sprinkle with half of the cheese mixture. Repeat layers. , Bake at 400° for 20-30 minutes or until golden brown. Cool for 1 minute before inverting onto a serving platter. Serve warm with spinach dip.

2 C. milk
2 eggs, separated
2 C. chopped spinach, cooked ( 1 box frozen, thawed, and squeezed of all moisture)
1 1/2 C. cracker crumbs (1 stack Ritz crackers)
1 sm. onion
1 clove garlic, chopped
salt and pepper to taste
1/4-1/2 C. melted butter

Steps:

  • Mix milk with egg yolks. Add spinach, crumbs, onion, garlic, salt and pepper and 1/2 of the butter.***Fold in stiffly beaten eggs whites. Put remaining butter in ring mold and pour in spinach mixture. Place mold in pan of hot water. Bake 350 degrees 45 minutes or until firm. Unmold. Pour chafing dish mushrooms into middle. *** = can be done the day before, up to this point.

- For a crispier crust, brush the top of the ring with melted butter before baking. - To add more flavor, sprinkle the top of the ring with grated Parmesan cheese or bread crumbs before baking. - If you don't have a bundt pan, you can also bake the ring in a 9-inch pie plate. If it comes out clean, the ring is done. - Let the ring cool for at least 10 minutes before serving. This will help it to hold its shape.
