THE BEST SPINACH MUSHROOM QUICHE

The Best Spinach Mushroom Quiche image

Made this for Easter, and EVERYONE said it was the best quiche they had ever had. Got it off of allrecipes, and tweaked it. I use the no roll pie crust from this web site, leave it unbaked, and add the ingredients.

Provided by nickie409

Categories     Savory Pies

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 12

1/2 cup butter
3 garlic cloves, chopped
1 small onion, chopped
10 ounces chopped fresh spinach (can use frozen, thawed & drained)
3 1/2 ounces mushrooms, roughly chopped
3 ounces shredded Italian cheese blend (parmesan, ramano, mozzerella)
1 (8 ounce) package shredded cheddar cheese
salt and pepper
2 whole eggs
2 egg whites
1 cup milk
salt and pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large dutch oven or pot, melt butter over medium heat. Saute garlic and onion in butter until lightly transparent. Add the mushrooms, and saute until they are fragrant. Add the spinach, and saute until it reduces down (about 4 minutes). Remove and reserve most of the liquid from the pan. Stir in all the italian cheese and all but 1/2 cup of the cheddar. Season with salt and pepper (make sure to taste at this point, as this is the only time you will be able to adjust the salt and pepper). Spoon mixture into pie crust.
  • In a medium bowl, whisk together eggs and milk. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture. Add in the set aside liquid if it seems too dry, and mix thouroghly.
  • Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

SPINACH, MUSHROOM, AND RICOTTA FETTUCCINE

Spinach, Mushroom, and Ricotta Fettuccine image

The name says it all! Spinach and mushrooms are gently sauteed in butter, then tossed with ricotta cheese and fettuccine pasta.

Provided by Lisabeth Moore

Categories     Main Dish Recipes     Pasta

Time 40m

Yield 2

Number Of Ingredients 7

8 ounces fettuccine
1 teaspoon butter
3 cups sliced mushrooms
½ pound bulk spicy pork sausage
1 (10 ounce) package frozen chopped spinach
6 ounces ricotta cheese
1 teaspoon lemon juice, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain and transfer to a serving bowl.
  • Melt butter in a large saucepan over medium heat. Saute mushrooms and sausage in butter until mushrooms are tender and sausage is browned and crumbly, 10 to 12 minutes. Stir spinach into mushroom mixture and cook until heated through, 5 to 10 minutes. Remove from heat.
  • Stir ricotta cheese into mushroom mixture until well-mixed; add lemon juice. Pour mushroom mixture over fettuccine and toss to coat.

Nutrition Facts : Calories 862.1 calories, Carbohydrate 98 g, Cholesterol 92.6 mg, Fat 32.7 g, Fiber 9.4 g, Protein 49.8 g, SaturatedFat 13.2 g, Sodium 957.9 mg, Sugar 7.4 g

Tips:

  • Use fresh ingredients. The fresher the ingredients, the better the quiche will taste. This is especially important for the spinach and mushrooms.
  • Don't overcook the spinach. Spinach wilts quickly, so it's important to cook it just until it is tender.
  • Use a good quality ricotta cheese. Ricotta cheese is the main ingredient in the quiche, so it's important to use a good quality cheese that is smooth and creamy.
  • Grate the Parmesan cheese fresh. Freshly grated Parmesan cheese has a much better flavor than pre-grated cheese.
  • Don't overbake the quiche. The quiche is done when the center is just set. If you overbake it, the quiche will be dry.
  • Let the quiche cool slightly before serving. This will help the quiche to set and make it easier to slice.

Conclusion:

This spinach ricotta mushroom quiche is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is also a great way to use up leftover spinach and mushrooms. The quiche can be made ahead of time and reheated, making it a convenient meal option for busy families.
