Tips:

  • Use fresh spinach for the best flavor. If you only have frozen spinach, be sure to thaw and squeeze out all the excess water before using.
  • Don't overcook the chicken. Chicken breasts can quickly become dry and tough, so cook them just until they are cooked through.
  • Use a sharp knife to slice the chicken breasts. This will help to prevent them from tearing.
  • Be careful not to overfill the chicken breasts. If they are too full, they will be difficult to roll up and may fall apart.
  • Bake the chicken roll-ups until they are golden brown and the cheese is melted and bubbly. This will take about 20 minutes.
  • Serve the chicken roll-ups with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or a simple salad.

Conclusion:

Spinach ricotta chicken roll-ups are a delicious and easy-to-make meal that is perfect for a weeknight dinner. They are also a great way to use up leftover chicken. The combination of spinach, ricotta cheese, and chicken is flavorful and satisfying, and the roll-ups are baked to perfection. Serve them with your favorite sides for a complete meal.
