RICE PILAF WITH SPINACH

Rice Pilaf with spinach image

This is a delicious variation of rice pilaf...and adds a bit of nutrition (shh...don't tell the kids). Neither of my kids will eat spinach on its own, but this is their favorite rice

Provided by Penny B

Categories     Rice Sides

Time 20m

Number Of Ingredients 4

2 pkg of your favorite rice pilaf (i use near east or knorr)
4 c water
2 Tbsp butter or margerine (optional)
1 pkg baby spinach

Steps:

  • 1. Make rice per package directions.
  • 2. When rice is done cooking and ready to set, add the package of baby spinach (don't worry--it will look like a LOT of spinach, but it will be fine) and re-cover.
  • 3. Let set covered three or more minutes to steam the spinach.
  • 4. Uncover and stir until everything is blended together beautifully (see, I told you the amount of spinach would be reasonable). If needed, re-cover and let steam some more if the spinach is still too separate.
  • 5. Serve and enjoy.

CARROT, TOMATO, AND SPINACH QUINOA PILAF WITH GROUND TURKEY

I found it was a good way to use up the leftovers from another dinner. We have the pilaf as a side dish for the two of us, and it is always too much. Adding ground turkey and black beans makes another unique meal that is quick to prepare. Enjoy!

BARLEY-LENTIL PILAF WITH MUSHROOMS AND SPINACH

Barley-Lentil Pilaf With Mushrooms and Spinach image

from "the perfect pantry" - http://www.theperfectpantry.com/2010/03/lentils-recipe-barley-pilaf-with-mushrooms.html

Provided by ellie3763

Categories     Spinach

Time 4h50m

Yield 8 serving(s)

Number Of Ingredients 12

1 cup pearl barley
1 cup brown lentils
1 medium onion, diced
1 quart vegetable stock
1/2 cup dried mushroom (porcini or wild mushrooms)
1 cup water
3 tablespoons tomato paste
2 teaspoons thyme, leaf
kosher salt
fresh ground black pepper
8 ounces cremini mushrooms, dirt brushed off, stems removed, quartered
5 ounces baby spinach leaves

Steps:

  • Place the barley, lentils, onion and vegetable stock in a 4-quart slow cooker. Set the cooker on HIGH.
  • Put the dried mushrooms and 1 cup of water in a glass measuring cup. Microwave for 1-1/2 minutes. Remove from the microwave and set aside to cool for 30 minutes. Gently scoop the mushrooms out of the measuring cup, being careful not to disturb the sediment at the bottom. Finely chop the mushrooms.
  • Add the mushrooms to the slow cooker with the tomato paste, thyme, one teaspoon each of salt and pepper, and the fresh mushrooms. Pour in the mushroom soaking liquid, being careful not to include the sediment.
  • After the cooker has been on for 4 hours, the lentils and barley should be done. Turn off the cooker, and stir in the spinach; the heat of the pilaf will soften the spinach. Adjust seasoning with salt and pepper as needed (and you will definitely need it). Serve hot.

CHEESY QUINOA PILAF WITH SPINACH

Cheesy Quinoa Pilaf with Spinach image

This creamy pilaf incorporates the fluffy, nutty-flavored grain, quinoa, with a decadent and delicious goat cheese gouda. This has an amazing flavor and texture. Try serving with steamed salmon. I think this would work well with pine nuts as well as a variety of other cheeses. Try regular goat, Parmesan, blue, etc.

Tips for Making Perfect Spinach Pilaf:

- Use the best quality rice you can find. Basmati rice is a good choice because it cooks up fluffy and separate. - Rinse the rice thoroughly before cooking to remove any starch and impurities. This step helps to prevent the rice from becoming gummy. - Be careful not to overcook the rice. It should be cooked through but still have a slight bite to it. - Use fresh spinach for the best flavor and nutrition. If you don't have fresh spinach, you can use frozen spinach, but be sure to thaw it completely before using. - Don't crowd the pan when cooking the spinach. If you do, it will steam instead of sautéing and will release too much water. - Season the pilaf to taste with salt, pepper, and other spices. You can also add other vegetables, such as carrots, peas, or corn. - Serve the pilaf hot or warm. It can be served as a main course or a side dish.

Conclusion:

Spinach pilaf is a delicious and healthy dish that is easy to make. It is a great way to use up leftover rice and spinach. This pilaf is also a good source of fiber, vitamins, and minerals.
