SALMON WITH SPINACH SAUCE

Salmon with Spinach Sauce image

You won't have to fish for compliments with this tasty recipe. Poaching is a quick and healthy way to prepare an entree as delicate as fish, keeping it moist and tender while cooking. And the flavorful spinach sauce adds a pretty green accent to the pink salmon. -Taste of Home Test Kitchen

Time 40m

Yield 6 serving(s)

Number Of Ingredients 8

2 cups heavy cream
4 tablespoons sweet butter
7 teaspoons salt
1 pinch of freshly grated nutmeg
1 lb fresh spinach pasta, narrower noodles preferred
1 tablespoon grated imported parmesan cheese
1 1/2-2 cups flaked poached salmon, all skin and bones removed
1/3 cup chopped fresh dill, plus additional dill sprigs for garnish

Steps:

  • Bring the cream and half of the butter to a simmer in a small saucepan.
  • Add 1 tsp.
  • of the salt, and the nutmeg, continue to simmer until cream is reduced by about one third.
  • Bring 4 quarts water to a boil in a large pot, add remaining 6 tsp.
  • of salt, and drop in the noodles.
  • Meanwhile, stir grated Parmesan, then the flaked salmon and 1/3 cup shopped dill into the cream, and remove from heat.
  • Remember, fresh pasta is ready in 2 to 3 minutes at the most.
  • Drain pasta, return it to the hot pan and toss with remaining butter until butter is melted.
  • Divide pasta equally among 6 heated plates and spoon salmon cream sauce over each portion.
  • Garnish with a sprig of fresh dill and serve at once.

Tips:

  • Choose fresh, high-quality ingredients: Fresh spinach, salmon, and cream will make a big difference in the flavor of the dish.
  • Cook the salmon properly: Salmon is a delicate fish, so it's important to cook it carefully to avoid overcooking it. Flake the salmon into bite-sized pieces before adding it to the sauce.
  • Use a good quality cream: Heavy cream or whipping cream will give the sauce a rich, creamy texture. Avoid using milk, as it will make the sauce too thin.
  • Season the sauce to taste: Add salt, pepper, and other spices to taste. You may also want to add a squeeze of lemon juice to brighten up the flavors.
  • Serve immediately: This dish is best served immediately after it's made. The pasta will start to absorb the sauce and become soggy if it sits for too long.

Conclusion:

Spinach pasta with salmon and cream sauce is a delicious and elegant dish that's perfect for a special occasion. It's also relatively easy to make, so it's a great option for busy weeknights. With its vibrant colors and rich flavors, this dish is sure to impress your friends and family.
