8 oz spaghetti, cooked, reserving 1/3 cup pasta water
2 tablespoons butter
5 oz sliced mushrooms
1 small onion, finely chopped
1 1/2 cups loosely packed spinach
3 to 4 cloves garlic, finely chopped
2 tablespoons flour
1 cup half-and-half
3/4 cup cubed, cooked chicken (rotisserie chicken works great)
2 tablespoons shredded Parmesan cheese
Salt
Pepper
1/3 cup reserved pasta water

Steps:

  • In large skillet, heat butter over medium heat. Cook mushrooms, onions and spinach in butter until vegetables are softened and spinach is wilted, about 4 to 5 minutes.
  • Stir in garlic. Add the flour and stir for 1 minute until the pasty taste cooks off. Add the half-and-half and stir slowly as sauce thickens. Add the chicken to skillet; cook until hot, stirring occasionally. Stir in Parmesan cheese. Season with salt and pepper to taste.
  • Add cooked spaghetti and reserved pasta water. Stir to combine.

6 oz fresh baby spinach
8 oz fresh sliced mushrooms
1/2 c chopped onion
1/4 c all purpose flour
32 oz chicken broth
16 oz penne pasta
3 c shredded rotisserie chicken
2 (8oz) pkgs fresh mozzarella pearls, drained
1 c roasted red pepper (comes in jar) drained & cut in 1/4 in strips
1 T Dijon mustard
1 1/2 t salt
1/2 t ground black pepper
1/2 c shredded Parmesan

Steps:

  • Preheat oven to 350. Spray 13x9 baking dish with cooking spray. In lg pan, melt butter over med heat. Add spinach; cook, stirring occasionally just until wilted. Remove from pan & set aside. Add mushrooms & onion to pan; cook stirring frequently, 5 min. Add flour (dissolved in sm amount of water) & cook stirring occasionally, 2 min. Stir in broth & cook stirring often, 15 min until mixture is thickened & bubbly. Remove from heat & stir in spinach, pasta & next 6 ingredients. Spoon mixture into baking dish & sprinkle with Parmesan. Bake for 30 min. until hot & bubbly. Recipe can be assembled & frozen up to 1 mo. Let thaw overnight in refrigerator & bake as directed.

olive oil flavored cooking spray or 1 tablespoon olive oil
1 teaspoon minced garlic
1 onion, finely chopped
1/2 red capsicum, finely chopped
3 slices bacon, chopped (WW brand if possible)
7 mushrooms, sliced
185 ml evaporated low-fat milk
1 tablespoon Dijon mustard
100 g baby spinach leaves
200 g pasta (any type - I use penne or fettucine)
chili flakes (optional)
black pepper, to taste

Steps:

  • Bring a large pot of salted water to the boil.
  • Spray a pan with olive oil spray and sauté finely chopped onion, capsicum, bacon and garlic.
  • When soft add mushrooms and as much or as little chilli as you like.
  • Cook until soft.
  • Put pasta into boiling water and bring back to the boil.
  • Cook to your liking.
  • Add dijon mustard and evaporated milk to the onion mix.
  • Stir to combine and heat very gently until pasta is ready.
  • If you like a'wetter' sauce add a small amount of the pasta cooking water to the onion/milk mixture.
  • Place washed spinach leaves into a colander.
  • When ready drain the pasta over the spinach.
  • This will wilt the spinach- the only'cooking' it needs.
  • Add the pasta/spinach mix to the sauce.
  • Stir to combine.
  • Serve topped with freshly ground black pepper and parmesan cheese if desired.
  • **Note: In Australia, on the Weight Watchers points plan, WW bacon is 1/2 a point for 3 slices and the small tin (185ml) of carnation brand light and creamy evaporated milk is 3 points.

1 cup red onion, diced
2 garlic cloves, minced
8 ounces baby portabella mushrooms, sliced
1 1/2 cups frozen chopped spinach
15 ounces tomato sauce
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon dried basil

1 tablespoon olive oil
3 cloves garlic, minced

1 tablespoon fresh thyme

2 cups milk
2 cups fresh spinach, rinsed well & chopped

  • In large non-stick pan over med-high heat, cook garlic, onion& thyme in oil for about a minute.

2 cups mushrooms, chopped in half
1 medium onion

  • Prepare the pasta, according to package directions, while you make the rest of the meal.
  • Put half the olive oil in a large pan, add the diced chicken and brown- set aside.
  • Put the rest of the olive oil in the pan and add the onions and mushrooms.

2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
1 tablespoon chopped garlic
Reserved spinach from Spinach and Pasta Pie
Reserved cooked pasta from Spinach and Pasta Pie
1/4 cup chopped fresh basil
1/4 cup grated Parmesan
1 tablespoon olive oil
3 large eggs, divided
Kosher salt and freshly ground black pepper
2 tablespoons canola oil, divided
One 16-ounce box spaghetti, cooked according to package directions, drained
1 medium onion, chopped
2 teaspoons chopped garlic
1/4 cup milk
2 teaspoons Italian seasoning
Half 4-ounce package crumbled feta cheese
Two 10-ounce packages frozen chopped spinach, thawed and drained
1 plum tomato, sliced thin

  • In a large skillet over medium heat, add the canola oil. When it is hot, add the mushrooms, season with salt and pepper, and cook until they are lightly browned and have given up their liquid, about 5 minutes. Add the reserved onions, Italian seasoning, red pepper flakes, and garlic and cook for 1 minute. Stir in the reserved spinach and cook until warmed through, about 2 minutes. Toss in the pasta and cook until it is warmed through, about 2 minutes. At the last minute, stir in the basil, cheese, and olive oil. Serve immediately.
  • Preheat the oven to 350 degrees F.
  • In a large bowl, beat together 1 egg with a generous pinch of salt and pepper. Whisk in 1 tablespoon canola oil. Add half the spaghetti (reserve the other half for another use). Toss it well to coat and press it into a 9-inch deep dish pie pan to form a crust.
  • In a skillet over medium-high heat, add the remaining oil. When it is hot, add the onion and cook until it is softened, about 5 minutes. Add the garlic and cook for 1 minute. Remove from the heat and set aside (reserve half the cooked onions for another use).
  • In a large bowl, whisk together the remaining 2 eggs, milk, Italian seasoning, and salt and pepper, to taste. Stir in the cheese, spinach (reserve 3/4 cup spinach for another use), and remaining half of the cooked onions. Pour the mixture on top of the spaghetti pie crust, top with tomato slices, and sprinkle with Parmesan. Place onto a baking sheet and bake until the pie is set and golden brown, 30 to 35 minutes. 2 teaspoons olive oil
1/4 cup chopped onion
1 teaspoon chopped garlic
4 ounces fresh mushrooms, sliced
5 ounces fresh Baby Spinach, cleaned & roughly chopped
2 -3 tablespoons red wine
2 cups marinara sauce
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper (to taste)
1/4 teaspoon red pepper flakes, to taste (optional)
1/4 cup grated parmesan cheese
8 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 375°F Bring a large pot of water to a boil. Cook pasta according to package.
  • While water is boiling and pasta is cooking, heat oil in a large non-stick skillet over medium heat.
  • Add onion & saute until tender, about 5 minutes. Add garlic, cook 30 seconds.

1/4 cup extra-virgin olive oil
1 pound mushrooms (such as button, maitake, oyster, cremini, and/or shiitake), torn or sliced into bite-size pieces
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1/2 large white onion, thinly sliced
2 cloves garlic, finely grated
1 serrano chile, stemmed and thinly sliced
1 pound fresh spinach (preferably mature), cut or torn into large pieces
1 pound bucatini or other pasta
3/4 cup crema or heavy cream
1 cup basil leaves, plus more for serving
1/2 cup finely grated Parmesan, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the olive oil in a large heavy pot over high heat. Cook the mushrooms, undisturbed, until browned underneath, 3 to 4 minutes. Toss and continue to cook, until browned on both sides and tender, 4 to 5 minutes more. Season with salt and pepper and transfer to a medium heatproof bowl.

  • Reserve 3/4 cup of the pasta cooking liquid and drain the pasta. Transfer the pasta and reserved cooking liquid to the pot with the spinach and mushrooms and add the crema. Bring to a boil and reduce to a simmer over medium heat, tossing the pasta constantly, until the pasta has fully cooked through and has absorbed some of the liquid, about 3 minutes. The sauce should be thick and creamy and will continue to thicken as it sits.
  • Remove the pot from the heat. Add the 1 cup basil, 1/2 cup Parmesan and 1/4 teaspoon pepper and toss to combine. Taste and season with more salt, if needed.
  • Divide the pasta among bowls and top with more Parmesan and basil leaves.
