1 pound spinach linguine
Coarse salt and ground pepper
1 cup heavy cream
1 clove garlic

Steps:

  • Preheat oven to 350 degrees. Spread walnut halves on a rimmed baking sheet; toast until fragrant, 10 minutes. Meanwhile, cook linguine in a pot of boiling salted water until al dente, according to package instructions. Drain; return to pot.

  • Bring a large pot of water to a boil, and salt it. Meanwhile, mince the garlic as finely as possible and combine it in the bottom of a warm bowl with the red pepper flakes, olives and olive oil.
  • Place the pasta in the pot, and cook until it is nearly done (test it for doneness by tasting). Plunge the spinach into the water, and cook until it wilts, less than a minute. 1/2 cup walnuts
2 tablespoons unsalted butter
5 ounces baby spinach (about 4 cups)
1 cup crumbled gorgonzola cheese (about 4 ounces)
1/4 cup grated Parmesan cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, toast the walnuts in a large skillet over medium heat, shaking the pan occasionally, until golden brown, 3 to 5 minutes. Remove the walnuts to a cutting board (reserve the skillet) and let cool slightly, then very finely chop.
  • In the last 2 minutes of cooking the pasta, add the butter to the skillet and melt over medium heat. Add the spinach, cover and cook until wilted, 1 to 2 minutes. Steps:

  • Bring a large covered pot of water to a rapid boil. While the water heats, wash the spinach and transfer it to a separate large pot. The water clinging to the leaves should provide enough moisture to steam it. Cover and cook the spinach on medium-high heat for about 4 minutes, until wilted but still bright green. Drain. In a food processor or blender, combine the spinach, walnuts, cottage cheese, garlic, Parmesan, basil, and salt and pepper until smooth, working in batches if necessary. Add pepper to taste and set aside. When the water boils, stir in the pasta, cover, and return to a boil. Then uncover the pot and cook until the pasta is al dente, about 7 minutes.   • Add the ricotta to a large bowl; season well with salt and pepper and set aside.

This makes a wonderful meatless main dish or a side dish. I adopted this recipe from Recipezaar in August 2006. I've since made this for my family and they loved it; however, I did made one minor change to the recipe. The original recipe did not call for garlic, but I felt it would have been bland without it. --NOTE-- Frozen spinach can be used. Just thaw, rinse and squeeze water from spinach very well before adding to the skillet of butter.

1 (10 ounce) fresh spinach, prewashed and drained
2 tablespoons butter
3 green onions, chopped
2 garlic cloves, minced
3/4 lb dried linguine
5 ounces cream cheese, cut into cubes
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
1/4 cup grated parmesan cheese
1/2 teaspoon fresh ground black pepper

Steps:

  • Remove any tough stems from the fresh spinach.
  • In large frying pan, melt butter over low heat.
  • Add green onions and garlic and cook for 1-2 minutes.
  • Add spinach and salt and stir until wilted.
  • Simmer until liquid evaporates from spinach, about 5 minutes.
  • In large pot of boiling water, cook linguini according to package directions.
  • Reserve 1 cup of pasta water.
  • Drain linguini and toss with 3/4 cup of pasta water, spinach mixture, cream cheese, parsley, and ground pepper.
  • If sauce seems too thick, add the rest of the reserved pasta water, otherwise you can throw out the remaining 1/4 cup pasta water.
  • Salt to taste.

Tips:

  • Choose fresh, tender spinach. Wilted or yellowed spinach will not have as good of a flavor or texture in the dish.
  • Cook the spinach properly. Spinach should be cooked until it is just wilted, but not overcooked. Overcooked spinach will be mushy and lose its flavor.
  • Use a good quality Parmesan cheese. The Parmesan cheese should be freshly grated and have a strong flavor. Avoid using pre-grated Parmesan cheese, as it will not have as good of a flavor.
  • Toast the walnuts before using them. Toasting the walnuts will bring out their flavor and make them more香脆.
  • Make the sauce just before serving. The sauce will thicken as it sits, so it is best to make it just before you are ready to serve the dish.
